Toddler-feeding issues

My 3 1/2 y.o. Son will not eat ANYTHING!! He even refuses breakfast. My WIC checks go to waste because he refuses the foods that the checks cover. I'm currently on a leave of absence at work and $$$$ is tight but I've been buying cases if Pediasure on a tight budget. So my son likes only potato chips SOMETIMES if I'm lucky but he is 'living off' Pedia sure. I'm frustrated beyond words. He will not choose anything when you offer variety. I spoke to the pediatrician and all they say is keep him hydrated but this has gone on long enough. I understand with height that weight may be affected but my son is at least 3 1/2 feet and is still at 32 pounds which seems like he's been for over a year. My son refuses meat and surprisingly his father is a vegetarian so no help there. I just feel concerned and no one is helping me in addressing the issues. I've been reading similar issues other moms on here have addressed but how could I turn this around. ANY advice I appreciate at this point.
