Kids will eat what feels good to them. She is getting protein and dairy from cheese and carbs from the bread so she is getting enough but if it goes on for a while take her in to a doctor to see why she is scared of swallowing. She may have hurt herself while eating something. Try giving her some raw veggies to like cucumbers or some fruit. Strawberries are soft and just leave a plate for her. She will try it. Just explain to her that they are soft and won't hurt her throat etc. She will go through stages of eating and it will go away sooner or later. Us as moms worry about their diet when they only eat 1 or 2 things but they get what they need and when their bodies want something different they will eat it. Eventually they get sick of eating it and move on. Good luck and don't worry she will eat other things soon. I would find out why she is afraid of swallowing. Don't stress on how long it takes her to eat though....the more she is stressed about it the longer she will take.
