I have an amazing Spanish Rice recipe I thought I'd share with you all! My kids devour it every time we make it.
1 cup long grain rice
1/4 or so of oil
brown the rice in the oil, then add:
3 cups chicken broth
1 can diced tomatoes
1/2 tsp oregano
1/4 tsp cumin
1/2 small onion chopped
Simmer on medium for about 20 minutes.
That's the original recipe. I have made some adjustments for my cooking style and my family's desires. My kids won't eat the tomatoes, so I use an 8 oz can of tomato sauce instead of the diced tomatoes. Also, I don't buy chicken broth, so I use 3 cups water and 3 tsp. chicken bouillion. Instead of the onion I use dehydrated onion, just 2 Tbsp. It turns out wonderfully.
Some other things I have done with this is add some precooked ground hamburger to it, or cut up some boneless chicken pieces raw to cook with it to make it a one dish meal!

I have four kids and it seems like something one loves, another hates, so we enjoy the meals that you can build yourself! Currently that would be Mexican. I can have out chips, taco shells, burrito shells, and all the fixings and they can create whatever they like without one of the kids complaining or going hungry.
My kids love spaghetti bolognese, never have any issues with them eating their dinner on spaghetti night! We also like to make our own pizzas. I make the dough and then the kids get to make their bases and build their own pizza. Delicious!
The favorite is probably Velveeta shells and cheese made w/ tuna and broccoli in it.
Spaghetti, lasagne, enchilladas, fish sticks ;) are also a few of the meals that all 3 of my kids will not only eat, but actually all LIKE. My favorite is any meal I don't have to cook, so.... pretty much never. lol
I make homemade chicken noodle soup. Almost everything is made from scratch - the noodles, the veggies and potatoes from our garden, etc. The only things I buy are some of the seasonings (only the garlic salt and minced onions - I grow parsley and garlic, among other things, in my herb garden), the chicken (which we do get from a local farm) the chicken stock (I buy the powdered kind because it's cheaper) and my secret ingredient... :P
I swear, all my kids go crazy for my soup and my hubby says I should package it up and sell it because it's so yummy :)
