egg allergies and birthday cakes

My sons 1st birthday is comming up this wensday. Marco also has a severe allergy to eggs whites, as most infants.



Now i am wondering if any moms know and vegan recipes or know whether or not eggs are okay in somecakes. ive been using applesause in leu of eggs for some of the things i bake for him, but i would like to make a really nice treat for him. something moist and delish ( haha it might be for me more, just kidding).



and yes i am going to ask my doctor as well.

there are egg substitutes available at grocery stores, just ask someone at your local supermarket...it probably would be easier to find at a chain store rather than a mom & pop grocery store.

I have a cake recipe I used every year for my son's birthday it turned out great every time, if he a severe egg allergy you do not want to give him eggs in any form.... do note that that the recipe says an 8x8 pan I always doubled it and either use a 9x13 pan or I have made the shaped cakes with the wilton cake pans it turns out great everyone loves it and it is nice that my son can have it because most birthday parties he can't have the cake so at least at his he can here is a link to the recipe http://southernfood.about.com/od/chocola...

I had to make a gluten free vegan chocolate cake for my cousin's wedding. Bob's Red Mill cake mix is gluten free, and to make it egg free, you need flax seed powder, and water. I used almond milk as well. You can find all the ingredients at Vitamin Cottage. They also sell an egg free substitute. Good luck. There was none of the cake left the next day when we went back to clean up.

Yea, I'd be leery of anything with eggs in it if he has a severe egg allergy. The purpose of eggs in most baked goods is to bind fats and sugars together (gives things a "cake-y" texture). Using apple sauce will help with moisture and texture but it can cause some baked goods to turn out soggy.
