First I wouldn't worry too much, if he is eating fresh vegetables, he is getting the most nutrition out of the veggies. But if you still want to put more veggies in his diet try zuchinni. There are losts of recipies on the web that have zuchinni hidden in sweets, such as chocolate cupcakes and butterscotch bars. Also you might want to see about borrowing a copy of The Sneaky Chef by Missy Chase Lapine from you local library, it has great ideas for sneaking veggies into things. By the by, when I cook with zuchinni, instead of grating as most recipies suggest, I use my blender and about 1/4 cup of water to make a soup like mixture. I do this for two reason, it hides better, and I am a lazy cook, always looking for the easy way out. I run a parent tot program and have made both the cupcakes and bars for our group and have had raves from the parents.
Good luck

My son likes any veggie that is fresh. Green beans, carrots, tomatoes, and fresh fruit, too. I think anything you can give him raw, do it. It's healthy, and the fact that he likes it at all is great! My son also LOVES cooked corn on the cob. Not regular corn that's already ready to cook, it HAS to be on the cob. Maybe try something like that.

I've got a really good recipe that I got from my Grandma... First, does he like fruit? If so, make him a smoothie!

Add fruit of your choice to the blender! I use:
Banana
Pineapple
Cut up apple (with skin still on)
Frozen berries

Add Vanilla Yogurt and some milk

Then the secret ingredient...

Washed Kale
Washed Spinach
Carrots (they're very sweet)
And maybe a little honey

Mainly, just experiment, these smoothies are really delicious! My 3 year old LOVES them and so does my husband!!
