You're welcome. I love cooking and I'm always trying something new. I'm always willing to share ideas. We had mahi mahi tonight with a really yummy rice dish I have not tried before. I cut up 3 or 4 strips of bacon into small pieces and half an onion, let it cook until brown and slightly crispy, added a table spoon or so of garlic and then a cup of rice. I let the rice cook until it had soaked up all of the bacon grease and then added 1-1/2 cups of chicken broth. Covered it until the rice was cooked through then added a cup of frozen peas and about 3/4 of a cup of grated parmesan cheese. It's not the healthiest but it was yummy. You could use it as a side dish to grilled/broiled/baked chicken too.

I have an oven bag recipe that is really good. 1 package of boneless chicken breast, 1 package of weber grill mix -lemon, 2 cups of rice and 4 cups of chicken broth for the rice. The back of the weber grill package has the ingredients for that as well it's like olive oil and water I think but I replace the water with orange juice. Once I put everything in the bag and seal it I mush it all around to mix it up and put it in a pan and throw it in a 350 oven for about 30-45 minutes or until the rice is cooked. You can tell when it's done because the rice gets really fluffy and there's not any liquid visible in the bag. It is really yummy and it doesn't even dirty the pan so easy easy clean up.

You can try this one it's one of my families favorites and its sooooooooooooo easy!!!

4 Boneless Skinless Chicken breasts

1 Good sized head of Broccoli

2 16 oz cans cream chicken soup

2 Cups Miracle Whip or Mayo (Depending on what type of family you have)

2 TBLS Lemon Juice

1 Teaspoon Lemon and herb or Lemon pepper



Boil chicken until done all the way thru, Boil or steam Broccoli (depending on your preference) In a medium Bowl mix Soup, Miracle Whip or Mayo, Lemon Juice, and Lemon Pepper together...When chicken is cooked drain and let cool long enough to be able to handle it Cut up or shred chicken put in a 9 1/2 x 13 baking dish strain Broccoli and put in baking dish mix in wet ingred...top with cheddar cheese a lot or a little depending on taste for cheese any cheese works...Put in pre heated oven 450 degrees and bake until melted...Easy and healthy all in one Like I said it's one of our favorites around here But most of all its quick and easy

We like tuna casserole with cheese melted in and crushed potato chips on top.

Or McMuffin casserole (english muffin, bagel or biscuit bottom topped with scrambled eggs, chopped up ham/sausage/bacon and shredded cheese. I could probably come up with a ton more using hamburger or chicken, cream of something soups, Veg-all...I just throw that stuff together in a big skillet a lot of times.
