All he ever wants to eat is mac and cheese! I need to find some good tasting stuff to add in (sneakily) so that he is at least getting some more nutrients from his food! :)

Hi Tausha, My son is the same way, he is 14 now and still loves him mac and cheese. I would change the noodles around and then add real fine choped chicken. My son loves it now with peas and eggs like a noodle salad. some times I would put it in a salad. He would eat it like that. I hope I helped, good luck..

Try steaming carrots, zucchini, or use frozen spinach - then blend in your blender and add into the mac & cheese. Just a little won't change the colour too much - and it's a great way to add hidden veggies. You can even do this with tomato sauce for spagetti. Any veggie should work - just make sure to blend the crap out of them:)

I had the same problem with my daughter...I couldn't get her to eat any veggies except corn. So each time I made it I added creamed style corn...it's fine enough that she didn't know it was added.
Also, make it into gulosh...just add browned ground beef (drain off oil), spaghatti sauce with veggies, and a little ketchup.

With my girls they are both very anti veggie so I had to find ways to sneak veggies into their foods. I found that buying the little jars of baby food veggies into their food worked out fine and often went unnoticed. If he ever grows out of it it also works great w/ pasta, caseroles any thing with sauce really

Ground meat, ground turkey, chopped tomatoes, carrots and peas, ketchup, croutons. Change up the cheeses.

Quoting Somer:

You can add pureed sweet potatoes or pureed white beans. This works on my 1 1/2 year old.

Yum I will definitely try that!

I tried putting peas and broccoli cut VERY small into it with my step-sons and it worked!!! As long as the veggies aren't too mushy it works great! Peas are sweet and broccoli goes really well with cheese.. you might want to try that!
