Back to work and still having to cook dinners

I have just started back to work after having our daughter and I'm having a hard time with dinners. Does anyone have any advice about cooking healthy and fast? Or make ahead dinners for the fridge or freezer? Any advice would be wonderful.

I was going to say I use my crock pot all year long. I don't think people really realize how much they help us working moms out. I usually make extra to freeze on days that I just don't have time to put it together before starting my day. In the summer we eat a lot of salads, sandwiches and fruit. That way the kids can make their own plate when they are ready...

pasta can be very quick & easy - while some packet pasta is boiling make the sauce using fresh or tinned tomatoes, onion, garlic, bacon or left over chicken from a sunday roast, or veg like courgette which takes only a few mins to cook/sweat down in a pan. for an alternative make a creamy sauce using double cream with the aabove ingredients, and to be superhealthy try wholegrain/brown pasta, or if you can afford it enjoy fresh pasta, this can be bought from most supermarkets & only takes 3-4 mins to cook! hope this gives you a few ideas :)

thanks, I can't wait to check out that website. It makes my evening so much easier when i put a roast in the crock pot. I am not great at make up things to eat. I follow recipes GREAT. thanks again.

I love my crock pot as well. Something that I find helpful is to plan out the weeks meals, shop for the food and then prepare the meat and veggies into one meal packages. That way you can just take them out and cook them. I love my steamer basket too. You can throw green beans, broccoli or carrots in there and they will cook in less than ten minutes. You can get one at the dollar store. They just unfold and fit into the bottom of your saucepan. We also love to grill chicken breasts marinated in italian dressing. On Sunday we grill like 6 or 8 of them for the week and then have them for lunches or slice them up for a salad later in the week. Hope this is helpful!

There is a good community on recipezaar called OAMC or budget cooking. They have lots of plans where you can make ahead dinners. I hear you though, it gets to be very tough working and getting a decent dinner on the table.

Crockpots are great... You can cook almost anything. Throw it together in the morning, set it on Low and get home after work in time for it to be served... And...

Chicken!! You can cook it a million different ways AND it only takes a casserole dish, some "toppings" and 20 mins in the oven.. This book offers several recipes:
