Hello ladies,

I am curious what everyone makes for dinner!

I cannot, for the life of me, figure out a solid dinner plan. I am just tired of making the same stuff every night and am looking for some fresh new ideas on how to spice up dinner.

I cannot live off mac n' cheese, and I'm hoping to maneuver away from frozen dinners.

I am a big fan of FoodNetwork.com. You can find so many creative dinner ideas. I always thought the recipes on there would be difficult and that is so not the case at all. I can go weeks without making the same thing.



Also, a lot of food brand name websites have creative dinner ideas as well. Like Pillsbury, Kraft, and so on.



For nights that we need a quick meal we will usually just make homemade pizza, or french dip. I will add a salad to it so my girls get a veggie. Other nights usually BBQ a lot since the weather is getting nice were we live.

You can come up with all kinds of creative dinner ideas involving chicken breast....chicken and rice, chicken and stove top cassorole, just bake it, grill it, put cheese on it....so chicken breast (boneless) are great to have on hand....also we have a spaghetti night and a taco night. Make a menu every week before you go grocery shopping and there are lots of websites with recipes!!!

Simple Enchiladas: One large can of Enchilada sauce, a pack of hamburger (or you can use chicken breast chuncks), a pack or two of tortillas, and  a pack of shreeded cheese.  Brown your meat in a skillet, drain, add half of your sauce and half the cheese.  Lightly oil a 13x9 glass baking dish.  One tortilla at a time put about 1/3-1/2 cup of the meat mix down the center of the tortilla.  Roll and place in the baking dish.  Pour the rest of the sauce over it.  Sprinkle with the cheese.  Cover with aluminum foil and bake at 350 about 20 minutes until the cheese is melted and sauce is bubbly.



 



Mini pizzas: Pita bread, pasta/pizza sauce, cheese, and any toppings your kids enjoy.  Get them to make dinner one night!  My daughter started helping with this meal at 2!!  I would spoon the sauce on the pitas and she would put on the toppings.  Now she is 5 and does everything except putting it in and taking it out of the oven.  Bake at 350 until cheese is melted.

i'm with tiffany, kraftfoods.com is great for creative dinner ideas. i have made alot of their recipes, and all have turned out great! most everyone likes it, i make meatloaf with the lipton onion soup mix, the recipe is on the back. i love checking out the recipes on different ingredients, you find lots of great ideas, so start checking out labels!

Classy Chicken
3 boneless chicken breats
1/4 tsp. pepper
3 tbsp. oil
1/2 ib. fresh broccoli
10 oz. can of cream of chicken soup
1/2 cup mayonnaise
1 tsp. curry
1 tsp. lemon juice
1 1/2 cups grated cheddar cheese
Cut up chicken into pieces and sprinkle with pepper. Saute in oil ove medium heat until white. Drain. Arrange broccoli pieces in bottom of buttered casserol dish. Place chicken on top. Mix soup, mayonnaise, curry and lemon juice together. Pour over chicken. Sprinkle cheddar chees on top. Bake uncovered at 375F for 30 - 35 minutes.
Real easy, reaql quick.

Try going to Kraftfoods.com. I love it! They have so many great, easy, quick and creative dinner ideas and recipes. Some of our favorites are Skillet lasagna and Enchilada layer bake.

Homemade pizza is always a good one...you can use frozen bread dough to make the crust and then top it with whatever you like.



Other ideas...homemade tacos, quesadillas, enchiladas, spaghetti, lasagna, baked chicken, poppy seed chicken...



Meatloaf is a nice change sometimes...my daughter loves it.



I made roasted ranch potatoes the other day by cutting up russet potatoes and pouring a mixture of dry ranch powder, sour cream, and milk over it.



I'm not always good on whole meal ideas, but if I can get the main dish down, I just add some veggies or other sides that I keep on hand and go with it.  I also turn to cookbooks...Bell's Best is a great one if you can find it in your area.



Hope that gives you a few creative dinner ideas.
