I make what I call tuna dip. I know kids love to dip into stuff. I use a can of tuna, 2 tablespoons of mayonaise (you can use fat free), a teaspoon of mustard, either onions or onion powder, celery or celery seed, and pickles and/or pickle juice. I mix it up and if it isn't thin enough add more mayo. Then we use tortilla chips to scoop it out. You can use crackers, pita bread, etc. You can change it up with whatever you like in your tuna.



I also like to make chicken and rice in the microwave. Just put instant rice in a microwave safe dish, add enough water to cover, add some butter, put frozen chicken breasts on top and your favorite seasoning and cook for about 10 to 15 minutes. Then I cut up the chicken and mix it all together, sometimes it needs more seasoning. It is quick, easy and healthy. Good luck

do u incorporate veggies into ur kids diet? if so maybe spice it up a little b y adding cheese asnd spices into the foos to make it taste better as some foods made couold taste plain and bland to a lil kid u could try making turtle wiches which have flavored cream cheese on a english muffin with cucumber slices on top of it or make nacho octo dogs boil hotdogs cut into vertical strips with tortilla chips branched out in the shape of an octopus on a plate with salsa and cheese and hot dog in the middle or there is tuna log rollsu would spread a thin layer of ur favorite tuna salad over a small whole wheat flour tortilla place a cheese stick or row of thinly sliced dill pickle along one edge roll the tortilla starting at the cheese stick edge into a log cut each log into 3 pieces hope these ideas help u

I have a recipe for a few great meals that two of my toddlers love. I have one for potato chip chicken strips, and au gratin beef bake, and homemade beefaroni and many great others. They are all easy to make, and if you would like a copy of the cookbook i made i can email it to you with all of the kid friendly recipes in it, including treats that are fun to make with the kids for some one on one time. i have no problem with getting him to eat his veg!!! but if i cook a sunday lunch he will just eat the veg and yorkshire puddings !!! where can i find that book ??? and does anybody no any good sites to go on for ideas ??? .... thanks  for your post jennifer :)

my daughter is great at eating almost anything. My son, will eat pizza chicken nuggets, cereal, and mac and cheese with no questions asked. I have recently discovered that he will eat anything that you eat in a burrito, or, with chips. LOL. So, I make alot of healthy  "finger dinners" such as nachos, burritos, tacos, celery boats (celery with peanutbutter. then you put a triangle piece of cheese on a toothpic and stick it in like a sail. )



lets see. pastas they will eat pretty good. sometimes I have to make some ingredients a secret by pureeing them.



make your own pizza night is fun too (and I usually use leftovers that day too. )



 



My kids love potatoes any way, but the one that always gets seconds is you take hamburgar and I always add half a packet of either chili flavor, or taco flavor, I like chili better. make that while you are frying potatoes in another pan. then combine with cream of chicken/cream of mushroom. (you can add whatever else you like, green beans, corn, peas, whatever) put in a casseole dish and top with cheese. bake long enough to melt the cheese and warm the soup.



 



another fav is take turkey breast and dice it, or shred it. mix with noodles and turkey gravy. (i have been using canned, but recently have made my own using broth) mix it all together with maybe some green beans or peas. if your really feeling frisky top with a dose of stove top, or mashed potatoes (both changes the flavor) very yummy middle of the year thanksgiving dinner. MMM



thise are quick and easy. also ideas like fajitas, enchilada casseorle are good favs that are filling and that can be altered to make extreemly nurishing!!!

I just bought a book by Jeesica Sienfield and it is great! It has a ton of recipes for toddlers and it sneaks in veggies so it's really healthy. I would recommend it to all moms!
