My daughter is a January baby so I feel you. She was only a month old when we had our first V-day with her. We wanted to celebrate with her because she is the love of our lives!! So one thing i learned to do was to request a corner booth whenever we went out to eat. I would sit facing the wall or away from the crowd so that I was able to nurse her discretely. Almost all of the time people thought I was putting her to sleep so they wouldnt disturb us. Another good idea is to invest in a nice shawl. They work better than regular blankets that fall off and nursing blankets that arent always inconspicuous. :)

If your baby takes a bottle and you can find a sitter, take advantage of a dinner out alone... otherwise- 8 week old babies are perfect tagalongs for dinners. Seriously. They're still in that sleep/eat/sleep stage for the most part. When my husband and I went out the first few times after our 3rd was born, we got a sitter for the older two and brought the baby with us since it was easier to find a sitter that way and we are only comfortable leaving small babies with family or other trusted moms.

pump, find a good babysitter, and go out for dinner. Enjoy each other's company for a couple of hours alone.

Either do something at home, or go out but include baby.

I would find a baby sitter that you trust with your child, pump milk for the night and maybe the next day if your planning on drinking. And go have some fun. If that doesn't work then I always like to have a dinner at home with a movie.

order supper in, or make a nice supper with each other

I agree - find a really good restaurant that delivers or something nice like that so you don't have to cook, but dress up the table with flowers and candles, get a couple of good DVD's and make a nice night of it. Or agree again with Maria, express what you can and go out for a nice feed!

either do something romantic at home, movie, nice candle lit dinner, etc; or pump before you go out. Good luck!
