I am so tired of our meat and three veg meals so need some inspiration. Our biggest problem is we are limited in our likes. Niether of us eat much seafood and veg is limited to potato, peas, corn, carrot and beans. Also keep in mind I'm not a good cook! I'd love a simple meatloaf reciep and one for a tuna pasta bake (one where it isnt easy to tell it has tuna so my hubby doesnt know he's eating it). Please help me by listing some of your favourite recieps including some that are good for toddlers.

i like this simple meatloaf recipe. I am also not much of a cook- but DH loves it. I fix it whenever the frig condiments need cleaned out. Different taste each time- depending on what half empty condiments are in the frig;)

1lb ground beef
1lb ground sausage
3 eggs
stale crackers or oatmeal
ketchup
mustard
whatever other condiments are almost empty in the frig- like worsterchest. sauce, steak sauce, BBQ sauce, salsa, etc.

Mix all ingredients together and put in loaf pan. spread ketchup over top of meat. Bake 425 for 45 min.

Here's my favorite casserole (we are picky eaters, too!):



Cheesy Chicken & Rice

1 can cream of chicken soup

1 1/3cup water

3/4 cup uncooked long grain rice

2 cups frozen vegetables (any kind- I usually use corn, peas, carrots mix)

1/2 teaspoon Onion powder

2 chicken breasts cut up in bite size chunks (more below)

1/2 cup shredded cheese



Combine first 5 ingredients in baking dish. Top with the chicken and season (salt & pepper) Cover and bake at 375 for 45 min. Top with cheese (brown cheese if you want)



About the chicken: the actual recipe calls for 4 whole breasts. I've found that we like it better with the chicken cut up- and bonus- 2 breasts is more than enough!



You can also freeze this one (I baked mine first, topped with cheese and then froze)



Here are two other constants in our house:



Shepherd's Pie (the picky eater version!)

1 lb ground beef

1 box instant potatoes (you can use real mashed but trust me- I had people who would NEVER eat instant potatoes eat this without knowing and they didn't believe me even when I told them!)

1 can gravy (need about 1/2- 3/4 of the can)

1 can vegetable beef soup (can use 2 cans and a little less gravy- depending on if you like more saucy pie)

1 can corn kernels (the smallest can)

margarine and milk for the potatoes if you make instant



Cook beef. Combine beef, soup, gravy, and corn in casserole dish (one that goes in the microwave if you want to be able to heat it that way). Prepare potatoes as per directions on the package. Heat beef mixture on stove (if in a dish that can handle that) or in microwave. Top with potatoes.



Chop Suey (at least this is what we called it at our house- it's not a Chinese Dish, though!!!)

1 lb ground beef

1 box small type noodles (macaroni or anything your toddler likes)

2 cans tomato soup

onion powder (just to season- maybe 1/2 teaspoon?)

ketchup (this is totally one of those "just add as much as you want" type recipes!)

cheese (optional)



Cook beef with a small amount of onion powder (1/4 t) and cook noodles. Combine all ingredients (other 1/4 t of onion powder) in a casserole dish (again- you might want to use a microwavable one). I'm guessing that I add about 1/4 c of ketchup- maybe a little more. Start with that and add a bit more if it tastes too much like tomato soup :~D
