Toddler who holds bowel movement on weekends

Our 20 mo toddler goes to a small family daycare/sitter and has 1-3 bowel movements per day m-f . She sleeps all night and wakes up happy and rested. Every Saturday for the past 7 months she will not have a bowel movement and wakes up 2-3 times Saturday night uncomfortable with what seems to be gas pain. On Sunday she is always tierd, less appetite and grumpy. We have tried it all natural (prunes, pears, flax oil) and medicine (miralax, milk of mag and gas meds) as suggested by the doctor. Even he seemed surprised she could hold it with the me and it is all mental. It all started when my in laws came for a few days and she didn't go. She ended up so consipated she was very upset. We had to use a suppository.
We give all the same food to daycare that we feed her. She is a very fussy eater she likes peas and corn will eat whole wheat bread but no fruit juice. She has some texture issues too and still eats a lot of mashed food. The hard part to understand is how there can be such a difference on the weekend. Any thoughts ideas ??

Oh Hun I wish I had some advice but I don't, however I hope you get her sorted as she must have a very poorly tummy on a sat night/Sunday :-(
Could you maybe give her a reward for going to the toilet through the week then maybe she'll go at the weekend too? Like a chocolate button or strawberry or something she realllllly likes!! And maybe don't talk about it too much?? It's well known the more you discuss things around children they realise they are getting lots of attention for something (good or bad) and continue to do it xxx
