What health changes have you experienced from becoming vegetarian or vegan?
My cholesterol is much better (and lower) along with my blood pressure. I've also noticed clearer skin and fewer allergy issues.

My oldest daughter has made the decision all on her own to become a vegetarian - for which I am so happy. We've never pressured either of our daughters, though they know whatever we have and or eat at home will be vegan or at the least vegetarian. It's always a joy to see your children make healthy choices.
This may be a strange answer, but I've discovered a love for roasted beets. Actually, any vegetable roasted is a hit in our household. I've also found a renewed love of hummus - and there are so many ways to make it and so many varieties!
