What health changes have you experienced from becoming vegetarian or vegan?

I made the change from vegetarian to vegan in 2004, after suffering through migraines, a large ovarian cyst that was bigger than a basketball (no joke), and IBS. My mom had asked if I would try the McDougall Clinic for 10 days, and at that point I had nothing to lose. I'm not kidding when I say a plant based diet completely changed my health and my life. The migraines stopped, my health issues stopped, I lost a lot of weight, and I was able to go back to school and live my life the way I wanted to live.

A lot of people ask me if it's hard to follow a plant based diet. My answer is that it was hard to have migraines every day and not be able to do things a 20 year old should do. That was hard, a plant based diet is easy in comparison.

Since that time, I've changed my diet, discovered great food, learned to cook, and made a new way of living. I'll never go back to the way I used to eat, and am so grateful I had help to make the change.

Do you expect your kids to be vegetarian or vegan?

We are raising our son vegan until he's older and he can make his own decisions about food. We don't want him to feel like we're forcing him to follow our diet. We hope that he will learn about the health benefits through our guidance and learn to cook his own meals and have an appreciation for healthy food. We can't say how our son will be in the future, but we know that for now he is healthy and happy with the food we provide.

What's one of your favorite foods you've discovered by being vegetarian or vegan?

Brussels Sprouts. When I became vegan, I learned how to cook vegetables in ways that were incredibly tasty. I'd grown up having a bunch of peas thrown on my plate, and never knew there were so many delicious ways to cook vegetables. I would have gagged at the idea of brussels sprouts before, but now I roast them with garlic and balsalmic vinegar and it's divine.

What's your family's favorite recipe for weekend breakfasts?

My husband makes vegan crepes and they are delicious! We set out bowls of fruit and powdered sugar to add to them. It's always something to look forward to on the weekend and fun to mix and match the crepe toppings.

Do you believe in spanking?

Momma J

I personally don't, I think it encourages hitting and I'd rather teach a child to think about their choices with a time out and a conversation.
