I have a love affair with the crockpot especially if I have a busy day coming up. I put about a pound of chickenthighsin the crockpot with 2 T of taco seasoning, a a can of cannellini beans and a small can of green chilis. This cooks on low for 5-6 hours. I then shred the chicken and wrap it in tortillas with cheese, sour cream, salsa, etc. Easy, relatively healthy and something that my entire family will eat.
