The veggie burger salad is about all I eat for lunch all year, but especially in the summer months. You can use whatever greens you want but I like using a mix that is at least 50% spinach, then I cut the greens up into bite size pieces, top with chopped onions, tomatoes, and pickles. The dressing I use is Karam's Garlic Sauce which I put on the salad, then add the veggie burger and cut it all up to enjoy. For my husband's, instead of the garlic sauce I add shredded cheddar cheese, then place the warm veggie burger on top of the cheese to melt it a little, then put a bit of ketchup and mustard on the burger. When I cut through the burger to make the pieces fork-worthy-size, the 'dressing' gets mixed down into the veggies below. We both love our separate versions.
