He will be 7 months old in a week and so far has 1-2 meals a day depending on when they are given.

Breakfast 2 tablespoons of cereal and 2 tablespoons of fruits or vegetables

Lunch (sometimes) 2 tablespoons of fruits 2 tablespoons of vegetables

Dinner 2 tablespoons of cereal and 2 tablespoons of fruits or vegetables

Usually 8 tablespoons on average given a day

Breastfeeding when he wakes up before bed and before and after each nap roughly6-8 times a day. With same side breast offered before and after a nap.

I am concerned about milk supply so I focus on milk feeding more as he is also teething and has a stuffy nose.

Any suggestions as to the amount of food should I offer more solids ?

At 7 months my girls were eating 2 or 3 meals a day, but my son was eating maybe a couple of times per week at most.

As a mom of a 7 month old myself that seems a bit excessive at times. My daughter only has purees for breakfast and or dinner and usually she only eats half a jar. I have been giving her Mum Mum rice rusks or a teething biscuit. But she usually gets breast or bottle from me or my DH most of the time.

That seems to be more than enough from my POV

Rule of thumb here: food for fun until they're one

Babies main source of nutrition should be breast milk until his first birthday. Introducing foods should be fun for baby, and never forced. Sounds like he's eating plenty of solids for right now. And always offer breast first. That way he fills up on milk, and solids can be tried out and tasted without pressure on how much he's eating.
