1st Birthday Cake

Emily - posted on 04/07/2009 ( 5 moms have responded )

Does anyone know a good recipe for a 1st birthday cake? Here's the thing, my daughter's diet has been limited to: Breastmilk, formula, and baby foods. The only source of sugar she has had is sugar that she gets from baby fruits and veggies. I am not opposed to sugar, but I don't want to overwhelm her with it on her birthday. Any good recipes are appreciated. I gotta get those pics of baby with a messy face:-)

My friend has a pancake party for her kids' first birthdays. Everyone comes over in PJs (grandparents included) and has a pancake breakfast. You can decorate the pancake in whipped cream etc.

Try using apple sauce as a suger sub.. We do this all the time with mixes and such. You might use a diabetic recipie. I am not much of a cook and don't have one, but I know they exhist. :-)

The book What To Expect The First Year has a recipe for a first birthday cake in the back.  No sugar in it.  I didn't make it, so can't tell you if it is any good or not.

I would recommend looking on They post reviews on there and you can see what other people thought of it before you try it. Here is a recipie that I think would be great. It is for carrot cake, using jars of babyfood carrots. :)

"This is a very moist carrot cake using baby food carrots. I frost it with a Cream Cheese Frosting, then cut into bars."

2 cups white sugar

1 1/2 cups vegetable oil

4 eggs

2 cups all-purpose flour

2 teaspoons baking soda

2 teaspoons ground cinnamon

1 teaspoon salt

3 (4 ounce) jars carrot baby food

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jelly roll pan. Sift together the flour, baking soda, cinnamon and salt. Set aside.
2. In a large bowl, beat sugar, oil and eggs until smooth. Mix in the flour mixture. Stir in the baby food carrots.
3. Spread batter into a 10x15 inch jelly roll pan. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

I make my own banana bread with spelt or brown rice flour as opposed to white flour and I also use little sugar because the very ripe bananas make it sweet naturally.  I just made my bread in the mold of a round cake and then spread natural strawberry jam on top.  My son still got it all over his face and I felt comfortable that it was healthy!
