Chicken Tacos

Guys this was sooooo wonderful.... for 2 reasons! 1. It's a 10 minute prep meal.. in 10 minutes, it's in the pot & I walked away!! 2. It's really really wonderful. Really.

Note: I have never before made a recipe that called for a jar of salsa... because it sounded so yucky to me... Give this a try, though!! It's wonderful!


2 lbs of chicken thighs (use breast if you want... )
1 jar of green or red salsa ( I used Pace thick n chunky)
1 can of diced green chilies
2 tsp ground cumin
1/2 finely diced onion (I left this out...ok, I didn't have any in the house..)
2 cloves of garlic, minced
2-3 Tbs of cilantro

What to do:

throw it all in the crockpot, stir it up & put the lid on.. I put my chicken in partially thawed out & totally raw & cooked it for 5 hours on high.. there was no need to shred the chicken, since it totally fell apart!!!

If you want to cook it on low, it will be done in 8 hrs, then shred your chicken...

Served it w/ tortillas & lettuce... so so good!!

Super YUMMY! Everyone in my family loved it! I served it with crunchy taco shells and tortillas, lettuce, avocado and sour cream.
