Honey Dijon Pork Tenderloin

This is my family's favorite! You can toss the leftovers with BBQ sauce and have pulled pork sandwiches the next day - if you have leftovers!

2 pork tenderloins
salt & pepper
1 clove minced garlic
4 Tbsp dijon mustard
2 Tbsp honey
2 Tbsp brown sugar
1 Tbsp balsamic vinegar
1/2 tsp dried thyme
1 Tbsp corn starch
1 Tbsp cold water

Sprinlke the pork with salt & pepper. Place pork in the slow cooker.
In a separate bowl, combine the garlic, honey, mustard, brown sugar, vinegar, & thyme. Pour over pork, then turn to coat. Cook on low 7-9 hours.
Pour the juices in a pan & bring to a boil over med heat. Simmer 8-10 minutes. Reduce by 1/3. Combine the corn starch & water. Wisk into the juices & cook 1 minute.
Serve the pork with the sauce poured over top.
I serve with green salad, steamed broccoli, and brown rice.

Oh my gosh, this sounds delicious!! We love pork tenderloins...definitely going to try this soon!!
