Taco Soup

Okay - We needed a Taco Soup recipe on here for 2 reasons. #1 - Everyone else has one! and #2 - It's suuuuper easy & a great way to clean out your pantry! BONUS Reason #3 - you can add what you want or leave out what you want & it always turns out ok anyway!! (unless it's the seasoning packets, don't leave those out!!)

2 cans of kidney beans

2 cans of pinto beans

2 cans of corn

1 large can of diced tomatoes

1 can of tomatoes & chilies (Rotel... or something simillar)

1 pkg taco seasoning

1 pkg ranch dressing mix

1 lb browned ground turkey or hamburger (optional, unless your family demands some kind of meat)

-shredded cheese & sour cream for embelishment


brown meat, drain fat & add to crockpot

sprinkle seasoning packets on top of meat

drain & rinse beans & add

add corn & tomatoes

Cover & cook on low of 8-10 hours or on high for 4-5. I think the longer you cook soup, the better, so if you have the time, definitely go w/ the Low for 8-10.

We LOVE this Taco Soup recipe! Instead of corn, we used hominy and it was SUPER delish!!
