Yummy ham and pea fried rice

My husband is away for the week and having a new baby is a juggling act with my toddler. Tonight I was desperate and had not thought of dinner. What was quick and what did I have in the fridge. This recipe was yummy if I say so myself and my gorgeous girl wants to take the left overs to Day Care tomorrow. The recipe can be altered to suit your needs.

1 packet of 90 second microwave brown rice

handful of cooked peas

5 slices of packet ham - chopped

salt reduced soy sauce

2 eggs, quickly whisked

grated cheese

1. Quickly fry the chopped up ham

2. Add in the rice and peas

3. Throw in a little soy sauce - to taste

4. Add the eggs and stir through until cooked

5. Serve up with grated cheese on the top.

This took 10 minutes and was a hit with My girl and myself. I want the left overs tomorrow - wonder if I can talk her out of it.

Sounds delicious Paula. I'll be giving this one a go. My girl has been on a bit of a food strike. Hopefully this will win her over.
