Milk-free and Egg White-free Cake for Baby?

My son turns 1 on Feb. 19th. I would like to make a cake for him without milk or egg whites, since he has not had either yet. Is anyone else planning on doing the same? Does anyone have any good recipes? I would like to make a banana or apple cake. Thanks.

I made apple spice cake for my daughter for her first birthday (2/5) here is the recipe, it was tasty. I topped it with cream cheese frosting.

Apple Spice Cake No Eggs/No Sugar

As with any "non traditional" cake, the batter for this cake will not seem "right".



1/2 cup molasses
1 cup applesauce
1 tsp cinnamon
1/2 tsp cloves
1 tsp baking powder
1/2 tsp baking soda
1-3/4 cup flour
1 tsp ginger

Mix the molasses and applesauce in a large bowl. Add remaining ingredients and mix well. Bake in a nonstick 8 x 8-inch baking pan or one sprayed with a non-stick spray, in a 350° F for 30 to 45 minutes, or until it tests done.

**The batter may be a bit dry and you may need to add more applesauce or a bit of water. Try adding 1/4 cup of applesauce first then gradually add a bit of water by tablespoon**

Have you tried looking in any gluten free cookbooks? Or even better here is one from vegwed.com Banana Cake



Ingredients (use vegan versions):



1 medium banana

7 tablespoons olive oil

1 tablespoon vinegar

1 teaspoon salt

1 teaspoon baking soda

1 tablespoon baking powder

1 teaspoon vanilla

1 cup sugar

1 1/2 cups flour

1 cup water

3 tablespoons cinnamon



Directions:



Place banana in plastic bowl and put it microwave for 20 to 30 seconds. Remove banana from microwave and stir well until banana is mushed. Add the flour to the banana and mix well.



Add olive oil, vinegar, salt. Stir.



Add baking soda, baking powder, and cinnamon. Stir.



Add sugar and stir well; and finally add the water (before this your dough may seem gunky, but when you add the water and stir well it will look like normal dough).



Place in small greased pan in a 350 degree oven for around 30 minutes.
