Overabundance of tomatoes and apples

I live in a farming community in Ukraine. My husband and I help at a church. The church members have blessed us with an overabundance of tomatoes and apples from their farms. Help! I have made everything that I can think of from apple sauce for baby, apple pancakes, apple pie, spaghetti sauce, bruschetta, to summer salads. Does anyone have recipes that call for either ingredient? Thanks for the help.

i am SO jealous!!!!!!!! i'm sure this is too late, but:

i make a ton of apple butter each year. so easy and so yummy:

slice your apples put them in a pot with a tiny bit of water..... like a tiny. then cover and simmer them till they get soft
then take a mixer and mulch them down till the consistency of apple sauce. add sugar, and cinnamon or any other spices you like..... then simmer until good and thick. put it in sterilized jars and process.

we eat this with ice cream, plain yogurt, toast, bagels, pretty much anything!

i also make apple chips... peel, slice and core your apples, dip them in lime juice, and place in your dehydrator... sprinkle with salt. we eat these all year long too!

tomatoes: can them, make pasta sauce, tomato paste, tomato soup, ketchup, tomato sauce....

i really am jealous!! enjoy!

I can't think of what its called but you put slices of mozzarella with slices of tomato and drizzle with olive oil and/or balsamic vinegar.
