So I just asked my girls what we should make for dinner, we just got back from doing our weekly rounds to the butcher, market etc. so tonight they decided we are having chicken kebabs with red and green peppers, onions and mushrooms from our friends mushroom farm. With a side of wild rice and feta salad and a bowl of spinach salad with spinach from our garden! mmm....
Summer food is here and I love it!!!

Oh my 8 year old calls them "chicken a bobs" she knows the real name but that is "her name" for them.

So what's on your dinner menu tonight?
And further to that, do you have foods you really crave in the summer besides BBQ?

Cornbread is baking as we speak. We'll have it with potato and cauliflower au gratin and honeyed carrots and green beans. It's winter here in Aus so I'm all about warming comfort foods lately, soups, curries, roasts etc. In summer I crave fresh, basic stuff, pasta salad, potato salad, fruit etc or vietnamese chicken and rice style meals.

Homemade beef tamales and homemade tortillas w/a side of green olives.

NO, I did not make these myself. Hubby bought them from a neighbor. Its the only way I can be sure they weren't made with cats or dogs around here.

I crave fresh veggies and fruit in the summer...I get SO tired of what passes for "fresh" in the winter...I'm growing tomatoes, green and yellow squash, peas, onions, and broccoli in my garden this year...Maybe some peppers...if I can get them to grow....I had a late lunch today...so the kids and I had veggies and hummus for dinner.

Tonight is pot roast with onions, mushrooms, carrots and baby red potatoes. The house smells soooo good! Kazyn is eating as we speak and I'm signing off to make myself a plate. Ta ta! :)

I love the summer fruits! It's fun to have so many different kinds of fruit in the house.

Tonight we're having corn on the cob and pulled pork sandwiches with Sweet Baby Ray's bbq sauce!

Tonight the hubs is having leftovers (lemon chicken or spaghetti squash casserole). The toddler and I are eating at church. The families that meet on Wed nights rotate out to cook supper. Husband can't go to church tonight since he's working night shift. He'll eat a salad for his midnight 'lunch'. The baby is having breastmilk.



Edit: The family who was supposed to cook tonight ordered pizza for everyone. They brought a side salad. There was a ton leftover, so I got to bring an entire pizza home. That will be tomorrow night's dinner. What a treat...no cooking AND pizza. =)

Last night I made my simple vegan wheat germ spaghetti. Tonight is vegan Mexican manicotti (rice, black beans, corn, bell peppers stuffed in manicotti noodles, covered in tamco sauce and rice cheese. Mmm.

The only summer foods I ever crave are fruits... Mainly watermelon, peaches, and berries. I love fruit salads, especially with my favorite citrus tea sauce.

tonight was easy and so unstressful because my husband told me to do sausages on bread...for once my kids werent screaming while Im in the kitchen trying to prepare a nice dinner. They had a bowl of veges too and some custard. I really need a cook or a baby sitter

It was really hot and humid yesterday so dinner was quick. Chicken nuggets with brown rice and salad. No humidity so far today (although it will be warm) so spahgetti with homemade tomato sauce with salad for dinner tonight.

My kids gobbled down strawberries, watermelon, green peppers, grape tomatoes,cucumbers, and everything that was fresh and did't require the stove to be turned on. he A/C is broken and it was 100 out today. My niece loves swet onions all by themselves, don't get it but she ate so ok. My oldest son broke out the bags of ready made chicken strips 10 bags worth. I thin I am going to file for a second morgage just to feed all the teenagers and my bottomless pit 6 year old. I feel bad though my little vegan is really sick so he didn't eat too much and this is his favorite wayto eat food. I love it I only have to cut up the watermelon because he can't break it across his leg. LOL

I hope he feels better tomorrow.

It is winter here so I am on a real Asian style broth kick .....I am obsessed with Asian food , we BBQ everything in the summer although I would be happy to eat nothing but tropical fruit in summer .

We had lasagna tonight. Frozen juice pops for dessert.

BBQ is a favorite in our house though. We even do it in the snow :) And we can never wait for summer so that we can have corn on the cob all the time. We eat fresh fruits and veggies all year, but can just eat more in the summer because it's less expensive.

We live out in the country, so in the summer we just pop over to the neighbors a mile down and pick up some fresh fruits and veggies :) I love summer!

Thanks for reminding me about dinner. :O) my husband would be so jealous of your dinner. I don't like onions, peppers, or mushrooms so he's lucky when he gets those. I'm excited for when our garden starts producing.

I grill year round, I love it. Grilled chicken kabobs and veggies ove rrice is one of my faves. Salmon too, I just grill it in a tinfoil pack with onions, garlic and lemon with a garden salad (not from mine quite yet). I ate mounds of the stuff when pregnant.

Not sure what tonight brings as both kids have the flu. Maybe some rib eyes since it's just Dad and I and it'll be cheaper lol.

I made a batch of red sauce last week so I really should do something with it. I am officially off for summer vacation, so I will be cooking each night. But I know hubyb will be home quite late and he may not even want dinner. So, it might just be me & the boy. Baked ziti sounds good, with a salad.

Last night I made Zuppa Toscana, served with a rich dark sweet bread.

Night before, we had fried rice.

Night before that we had mexican fried rice. That was fun & different.

I'm thinking that tonight I'll make butternut squash ravioli - well, I won't make the ravioli. I'll cook the stuff I bought and serve it with their choice of sauces ( or none, I prefer to eat it as is ) and asparagus, with a bread.

We typically don't have a dessert, but we made ice cream yesterday for Memorial Day.



I LOVE fresh watermelon in the summertime! And anything with blueberries.

Probably just some steak sandwiches with veggies and dip. Husband is out of town and I don't feel like cooking. The steak was BBQ'd last night.



I get mega summmer food cravings. Corn on the cob, mixed greens from my garden or the farmer's market, fresh herbs and cherry tomatoes from the garden (the tomato smell in the greenhouse alone!) and the FRUIT. CHERRIES. Cherries are handsdown my favourite thing to eat ever, especially Rainier cherries. Right now we can only get American ones, but soon it will be BC cherry season and I will be eating the hell out of them.
