This is sooo yummy, and my 14 month old LOVED it!

Ingredients
1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger

Directions
Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans.

In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.

Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.

That sounds really good! I find I don't have a lot of time for baking these days, and where I once swore I would always cook from scratch, now I make this:

1 box spice cake mix
1 can pumpkin puree

Stir the two together, and I bake them as muffins, which takes 20-25 minutes at 350 degrees. They're my husband's favorite thing ever.

I've made a very similar recipe before--I added chopped pecans and some whole cranberries, and thought it was delicious. I've also made a lower-fat version, replacing about 1/2 the oil with an extra 1/2 cup of pumpkin--I'd roasted and pureed a pie pumpkin, so I didn't have to open another can.;

I too make this pumpkin bread and but I add sliced apples(golden) it makes it even more yummy! Cut a half one per loaf and just throw them in the batter and bake!
