I NEED SEVERAL RECIPES FOR CHICKEN, I HAVE DONE TERRIYAK CHICKEN, BBQ CHICKEN, BOILED CHICKEN, FRIED CHICKEN, BUT NOW THEY SAY ITS BORING THEY WANT CHICKEN COOKED DIFFERENT. ANY IDEAS?

You could try homemeade chicken fingers... Crush up some rice crispies and some corn flakes then mix together in ziplock bag. Cut up chicken in either finger shapes or use meat hammer and squish a bit then use cookie cutters and cut shapes. If your kids are over 2 you could first dip the chicken in honey, if not skip that step and add them straigh to the ziplock bag. Coat then bake at 180 C until juices run clear (times vary due to sizes) You could also use this recipe with whole chicken breasts.

A sweet alternative is this: take a mixture of chicken pieces some with skin and some without (ie drums, breasts, etc) and place in casserole dish. Open a tin of peaches (in their own juices or water, syrup is too high in sugar) either halved or chunks, and add them to the dish, using only a bit of the juices from the tin, about an inch high in the dish. Bake at 200 C for 40mins - and hour or until juices run clear. Serve on sweet potato and carrot mash (boil the taters and steam the carrots, mash up and mix together when done... nice hidden veg trick!) drizzle some of the juice over and scatter peach chunks on and around. You can also use tinned apricots or any other sweet fruit.

Creamy chicken pie, use either ground chicken or cut up chicken. Boil some potatoes and steam some cauliflower (or boil if no steamer or metal collander). When cauli is done (nice and soft) puree then return to the pot and add a bit of milk and butter or marg until a thick yet creamy and smooth consistancy. Brown the chicken and add to casserole dish, covering with the cauliflower sauce. Now is the time to add some sea salt (or regular) and pepper. If your kids eat mushrooms or onions you could brown these with the chicken if not, the sauce is the veg so you can get away with just that. Now, if you want a fluffy pie topping, add the potatoes in little pieces into the dish with the chicken, if not mash them up making them creamy but not too liquidy... you want them to sit on top of the pie so not a lot of milk, if you have a handheld mixer or regular mixer use to fluff taters up.

Right so if you're having the taters as the topping then pop in the oven now at 200 C and bake for about 15 mins or until nice and golden on top (not blackened though! If you want the pie topping, then once everything is in the dish (potatoes and all) then use pillsbury crescent rolls or pie topping and place on top. Make sure to poke holes! Bake until pie topping is crispy and golden.

For a creamy cheesy pasta and chicken recipe... do the same thing as above with the cauliflower (I use this for all my cream-based recipes, lot healthier!). Boil pasta and grate about 2 cups of cheddar cheese. Brown the chicken (ground or small chunks of chicken). When the pasta is done, drain and return to the pot (heat off). Add 1 1/2 cups of the cheddar, a small knob of butter and stir until cheese is melted. Add some of the cauli sauce and the chicken when done. Stir until everything is nicely mixed in. Again, if your kids eat veg, add some courgette (zucchini) or whatever else they like.

This cauliflower sauce can be frozen, just don't add milk to it until making to sauce. It can also be used instead of canned soup for tuna casserole!

Another chicken dish is this

Oven to 200 C. Place chicken breasts (boneless skinless) in casserole dish. Cover with tinned diced/crushed/chopped tomatoes. Get the ones with garlic and basil or oregano or any other spices. Bake for about 30-40 mins. Serve over rice and sprinkle some parmesan on top!

Also just plain roast chicken...

Oven to 180 C. Wash the whole chicken. Pat dry and place in baking dish. Roll a large lemon, pushing into it. This releases the juices. Cut in half. Drizzle some sunflower or rapeseed oil over the chicken, then squeeze the juice of 1/2 a lemon onto it. Sprinkle paprika all over the chicken. Next, rub salt and pepper in the chickens cavity. Stuff some fresh herbs (rosemary, sage, etc) or use dry if fresh unavailable. Take the other half of lemon and shove into cavity. Wash and cut carrots in larg-ish chunks and place around the chicken. Quarter onions and do the same. If you want mash, boil up some taters, if roast taters are your thing then cut up in medium-small chunks some regular and sweet potatoes. place in a small baking dish and cover with sunflower/rapeseed oil (I say these because when using for cooking, they're 100 times healthier than olive oil. When introduced to heat, olive oil turns into 100% fat. For this reason, it us best used cold, on salads, etc although the others can be used so as well). Sprinkle salt and pepper and paprika on the taters and give a good mix untill all are coated with seasoning and oil.

Place the bird on the lowest rack and the taters a bit higher up. After 30 mins, switch them so the taters are at the bottom of the oven and the bird is in the middle. Baste the chicken often (about every 25 mins or so). Cook for another half hour, at this stage the taters can come out and be covered with foil and set aside. Check the chicken, if juices run clear then take it out, if not try another 10 mins or so.

Once the bird is done, remove and cover with foil letting rest for 10 mins before carving. It will be nice and juicy thanks to the lemon. If you find it too lemony, then skip the squeezing of the lemon over it at the beginning and just use half to shove inside.

We are big fans of ground chicken. It's very good in tacos. You can also make it into a burger; we've done it topped with lettuce and cesaer dressing, BBQ sauce, bacon and cheese; and curried. I think any classic burger topping would be excellent. We also like shephard's pie made with chicken. The newest favorite is taking an assortment of chicken pieces (legs and breasts) and cooking them in the crock pot with several adobo chilis and a bit of chicken broth. Just take the seeds out of the chilis if your family doesn't like spicy foods. You can then shred the chicken and put it on sandwich rolls with BBQ sauce or turn it into enchiliadas. We usually make a huge batch and turn it into both so we can get a couple dinners out of it.

I make creamy chicken crescent rolls. Get the crescent rolls in a can, some cooked shredded chicken, a can of cream of chicken, milk, and shredded cheese. Unroll the crescent rolls and put chicken and cheese inside, and then roll them up. Bake at temp on can for 15-20 minutes or until golden brown. While they are cooking, on stove mix cream of chicken with half can of milk and about half cup of cheese until cheese is melted. Pour over crescent rolls before serving or put on side for them to dip it in. My kids love these.

My grandkids love 'special chicken'. It's sooo easy! Instead of using flour, use instant potato flakes, salt, pepper (I use white, it's milder), dried parsley, Lowry's seasoning salt (optional). You can also use a little garlic salt, onion salt, whatever their little tastes will tolerate. Their mama makes it for them several times a week!



Do they like spaghetti? You can add chicken instead of hamburger. I make chicken parmesan, adding summer squash, zucchini, onions, garlic, again, you can experiment with what they will eat, over spaghetti noodles.

Grilled chicken! This is the best method for grilling chicken I've ever seen. Start with leg quarters (leg and thigh still attached) and season with a rub especially for chicken (like Famous Daves). Heat your grill to high, grill for about a minute each side to get some crispiness to the skin (even if you take the skin off after grilling, you've still imparted flavor and it looks nice). Move the chicken over to one side of the grill and turn off the burner underneath, keeping the flame going on the other side. Close the lid and grill using indirect heat for about 45 mins, or till juices run clear when poked with a fork. The chicken will be cooked through and still moist and juicy.

I do understand this issue, I have tried chicken fried rice, chicken quasadilla in a shape of a fish or a star for my girls and i've even used chicken for a cheesesteak and a taco salad, hope this helps.

Prosciutto chicken:
Place cling film over chicken breast ( how ever many you may want) and flatten them either with a steak hammer simpley a frying pan, just enough so they are about half an inch thick.
get prosciutto ham and wrap it round your chicken, sprinkle on tyme and black pepper, add oil to a grill pan or frying pan and fry chicken on a med heat for about 5-6 min, check they arent pink in the middle b4 serving. I then , in the same pan fry up some raw asparagus for no more then 4 mins :o)

I take my chicken sprinkle it with salt and pepper, then wrap it in a strip of bacon, and then roll it in brown sugar and bake in the oven. My kids and my husband love it every time i make it for them.



Here's the recipe:



Sweet and Spicy Bacon Chicken



4 chicken breasts cut in thirds (12 pieces)

Bacon slices

salt and pepper to taste

garlic powder

chili powder

brown sugar



1) Cut each breast into 3 pieces, season all the chicken with the spices, then wrap a bacon slice around each piece, roll in brown sugar and place into an oven proof dish....make sure you have some olive oil in the dish too, like 2 or 3 tablespoons is fine.



2) Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked through and bacon is nice and brown and crispy.

1 large onion or 2 small onions
1/4c garlic olive oil (not extra-virgin)
2 teaspoons English mustard
1 tablespoon dried sage
Freshly ground black pepper
1 tablespoon Worcestershire sauce
1 lemon
10 chicken legs
5-10 italian sausage links (sweet or mild) cut in half
2 tablespoons fresh sage leaves, chopped
Directions
Peel and cut the onion into eighths, and put into a freezer bag with the oil, mustard, dried sage, a good grinding of pepper, and Worcestershire sauce. Zest the lemon into the bad then Cut lemon in half, squeeze juice into bag, and then cut the halves into eighths and add them. Squidge everything around to mix (the mustard needs help to combine) and then add the chicken pieces. Leave to marinade in the refrigerator overnight, or for up to 2 days.


Preheat the oven to 425 degrees F. Allow the chicken to come to room temperature in its marinade.


Arrange the chicken pieces in a roasting tin skin side up with the marinade, including all the bits and pieces, and tuck the sausages around them. Sprinkle the fresh sage leaves over the chicken and sausages and then put the tin into the oven to cook for 1 hour and 15 minutes. Turn the sausages over half way through to color them evenly.

Arrange the chicken and sausages on a large platter.

saw Guy F. on food network yesterday... awesome Tequila Lime chicken recipe...sooooo easy: Foil..spread with olive oil (I used olive oil spray), red bell pepper slivers, red onion slivers, chopped jalapenos, chopped garlic, chopped rotisserie chicken (I used our leftovers), tequila, lime juice, cream cheese, parmasean cheese, mozarrela cheese, cilantro. there were no measurements - it was a 30 second recipe clip. Make a foil packet (seal tightly with another piece of foil on top) and put on grill for 15-20 min. I put in a 400 degree oven for 18 min. served on sub rolls. DELICIOUS!!!!! Easy! Enjoy!

A super easy and yummy chicken fettacini alfredo is to use your crock pot of you have one. I use a can of store bought alfredo sauce for each 2 chicken breasts. (that's all we need for my family of 4 because it is quite filling). I pour the sauce in the crock pot over the chicken breasts then cook on low for 4 - 6 hours. Right before serving I steam up some broccoli and cook the noodles. The chicken should be super soft and just fall apart, shred it up or break it into peices and put over the pasta, top with sauce from the crock pot and the broccoli....season to taste and WALA.

Chicken / vege kebab skewers..(marinade in pineapple juice and papaya ), ( use veges or go tropical pineapple , capsicum ,onion , baby corn ,carrot &

i make this awsome chicken dip, a friend of mine let me have the recipe

its two large cans of white chicken,1/2 cup of ranch dressing,1/2 cup of sweet baby rays buffalo wing sauce,1 pkg of shredded cheese,i block of cream cheese,mix all the ingredients and pre-heat oven to 350 put ingredients in a safe cooking dish and put in oven til cheese is nice and bubbly serve with chips its a big hit with my kids and entire family

I've tried to make 1 bowl chicken macaroni soup. My children are very like it. It is the simple recipes I think....
1. macaroni boiled until tender then drain
2. heat the margarine enter mince garlic and chicken
3. boiled water and add the results of step 2 and then add grated cheese, green onions add salt to taste.
4. serve warm

1/2 stick margarine or butter
1 pkg. cream cheese (8 oz.)
1 cup parmesan cheese (dry, from a canister)
1 cup milk
Melt butter and cream cheese together in a medium-sized skillet. This is going to look oily and runny, but that's how it should look. Add the milk and then the parmesan cheese at the very last, stirring until the sauce is thick and creamy. Serve over your favorite pasta. .
This basic sauce is so yummy and so simple to make! You'll never need to go out for it again! I also have added frozen peas to it I hope your family will enjoy this as much as we do.

Get some chicken breasts or tenders and dip them in egg and then a mixture of French's Fried onions (crunched up) w/ a bit of flour. Then, just bake it. You can also melt a little cheese on the top when coming out of the oven. It's good.
Chicken spaghettis is also great. You just fix the noodles as usual, add a can of cream of mushroom soup and cream of chicken (adjust according to serving size), add tomato sauce sparingly and according to your taste, chopped onions, green peppers, fresh or canned mushrooms, and melt shredded cheese in it.
You can also add things like black olives, pepperoni, etc.. depending on what your family likes.
And, my kid's favorite is chicken nachos. Just grill a few chicken breasts cut into strips and season with some paprika and/or chilli powder, and maybe a little red pepper to spice it up, it's good to squeeze a lime on it too and grill w/ onions if your family likes. Then put the chicken on tortilla chips with cheese, salsa, etc.. And, if you're in a pinch... canned chicken will even work for the nachos.

My kids 6 and 7 love our korma chicken, fry an onion in sunflower oil. when brown add 1 tsp of cumin, 1 tsp of ground coriander and tiny amount of chilli powder for flavour, 1/2 tsp of tumeric. add 1 or 2 clove of garlic and ginger (as much as required which i usually smash up in a pestel and mortar), and the chicken and brown.

add to this 200ml chicken stock, I just use of of them cubes in a mug of hot water and a sqirt of ketchup.

In a blender put half a mug full of cashew nuts which you have already covered in boiling water to soften (put the water in aswell), about 100ml of cream and 100ml of nat. yoghurt, whizz it all up till smooth. add this to your pan with everything and cook for about 20 mins it is YUMMY!! My kids eat it with rice, I usually put it in a metal balti dish so they think they are in a restuarant, it is not hot or too spicy for them as the little one doesn't like hot stuff. I serve it with nan bread and popadom they love it : )

I don't know how old your kids are but how about chicken ring do have a round stone.

CHICKEN RING:

4 chicken breast

1/3 lb. fresh broccoli florets

2 - 8oz. can ref. crescent rolls ( pillsbury)

1 Tasp. parsley/ salt/ pepper

8oz. cheddar cheese, shredded

2 stalks celery

1 small oion

1 can cream chicken soup



Preheat oven to 350. cut chicken into small pieces place in a batter bowl. chop celery, oion, broccoli with food chopper. mix all ingredients together. place in a ring on top of crescents

i make a chicken mac and cheese if i don't have a lot of time i buy a cooked chicken from the store cube the chicken cook your macoroni till just about soft then cube old cheddar cheese and cut some onion small pieces then put all that aside seperately take some fresh broccoli and just blanch it and drain mix all ingredients together in casserole bowl sprinkle with pepper and pour enough milk till the milk is just under the top of the mixture and put in oven for 1 hour on 350 if you want crunchy top leave uncovered and cover if you don't i usally have enough chicken to make 2 and i freeze one for another night

you could make chicken fettuccine alfredo. My husband and son love it. you just cook the chicken cutlets (bake, sautee, grill, etc) the way you want and shred it. Cook your pasta noodles of choice and get the canned alfredo sauce. put the sauce in a pot big enough to add the chicken into and once your chicken is done, throw it in the sauce, heat it up and pour it over your noodles.
