not sure what you consider good, but our family likes tator tot casserole.   1lb ground beef , cream of chicken soup, green beans, dried onion soup mix, and tator tots.  smash the ground beef into bottom of casserole dish, sprinkly with some dried onion soup mix, cover that with can of green beans, cover that with tator tots, and then spread two cans of cream of chicken soup over that and bake at 375 for 90 min.

I make a wonderful enchilada casserol! It is so yummy and easy to make!! All you need are a package of corn tortillas, 1lb of your favorite meat, your favorite veggies (i use like canned corn and green beans because they are easy and my kids like them), a large can of red enchilada sauce and 1lb of graded cheese (I use cheddar because that is usually what I have in the house).



Preheat the oven to 350. Cook the meat in a deep skillet, add the veggies to cook for a little while. Add the enchilada sauce and heat it all up (my mom likes to add salsa too but I don't like it spicy so I don't). Take a 9x11 casserole dish and place the corn tortillas on the bottom and layer the meat sauce cheese and tortillas until you get to the top. Top it off with cheese and bake until all the cheese is melted and it is bubbling around the edges.  Let cool for 5 minutes and serve!! It is great with sour cream and refried beans. I let my kids help cook when I am making casserols so they know what is going in it so they eat it later!! Hope this helps and let me know if you have any questions!!
