Anybody care for a sun pickle recepie!!

ingredients:
Fresh Dill (up to 3 bundles)
Cucumber Pickles
Jalepeno's (optional)
Garlic up to 3 bulbs (optional but recommended)

Brine:
Canning Salt 1/2 cup
Pickling spices 1-2 tsp
Alum 1 tsp
White Vinegar 4 cups
Water 2 cups
Rye Bread (one loaf, will explain)

Prep time: 20-60 minutes, depends on how much you want to make.
Cure time 3 days

We use the Half gallon Vlasic jars, the amounts for the brine are proportionate to one gallon of brine. When I made pickles this year, I used 6 half gallon jars, two gallon jars and a small jar for 20 pounds of pickles. Personally, I love garlic and jalepenos in my pickles, if you are not fond of one or the other, by all means, you don't have to use it!

Wash the cucumbers with fresh cold water!

Using the fresh dill, jalepeno's, and garlic, put a layer of these ingredients in the bottom of your jar. I recommend at least a half bulb to half gallon jar, it adds great flavor! Start packing in your pickles and layering dill between them. When you think you are done, pack the jar by shaking the pickles down and pounding the bottom of the jar with the palm of your hand. once your jar(s) is/are packed, it's time to make the brine. I recommend packing all of your jars before you make the brine.

To make the brine: pour into a gallon pitcher 4 cups of vinegar, two cups of water, half cup of pickling salt and 1 tsp Alum. Stir together until salt is dissolved completely.

Put a tsp (or two) over the pickles and pour the brine to the rim of the jar, top with a slice of rye bread, put on the lid and set in the sunlight for three days. On day three, open them up and ENJOY!!!!

I am not quite sure what the exact reason is for the rye bread but my mom has ALWAYS used the rye bread! I do taste the difference too! I think the carroway seeds give it a little extra flavor! When you are ready to enjoy them, you can just discard the bread altogether!

I use to make pickles similar to these that I called Solar Pickles, but did not add the rye bread. Can you please tell me why that is included. Sounds very interesting. Thank you, will look forward to hearing back. Joette
