i just recently started brining all the pork i eat and it is the most amazing thing. i always find that pork chops can come out dry and brining them makes them so juicy and delicious. you need
1/2 cup salt ( sounds like way too much salt but the pork will not come out salty as long as you rinse them and dont add any more salt during the cooking process)
1/2 cup brown sugar
2 tsp thyme
2 tsp fresh ground black pepper
8 cups water
put all ingredients in 1 gallon freezer bag and shake a little bit to help dissolve salt and sugar then add pork. seal and place bag in a bowl or some container and throw in the fridge for no longer than 3 hours. then take them out and rinse them to get off all the excess salt. then i preheat the oven to 350 get out a baking sheet and put that in the oven to get hot. and get out a skillet with some olive oil and heat that up so it gets nice and hot and then add the pork. i seer it for about 3-4 minutes per side so they get nice and browned and the take them out and put on the baking sheet in the oven and let cook for about 15 minutes. they are great just like that but sometimes ill caramelize some onions and put them on top of the pork chops when they are done. or serve with some applesauce.

My favorite way to cook porkchops is to brown them in a little oil and then cook them at a simmer (in an electric skillet or wok works well, though you could probably do it on the stove too) in cream of mushroom soup. The cream of mushroom soup I use is condensed, so I add milk to make it the actual SOUP, not the condensed soup. The soup should be covering the meat. Cover it and cook it for 2-3 HOURS at a really low simmer. The soup basically turns into a mushroom gravy and the pork chops can be cut with a fork and absolutely melt in your mouth. You can serve with either rice or noodles and a veggie :).
