Hi! I have a three week old so I have been cooking casseroles (easy dinners)! We love Mexican so I am wondering if anyone has a good easy recipe (not too many ingredients!)?

Not exactly a recipe but some thing that I threw together that worked out pretty well.



1 lb ground beef

1 package taco seasoning

1 package small tortillas

2 - 3 cups shredded cheese of choice (I like to use 4 cheese mexican store brand)

depends on how cheesy you want it

1 container - choice of sour cream

salsa

green onions

cilantro



brown meat and prepare taco seasoning as directed on package

Preheat oven to 350

layer with tortilla in a casserole dish

mix meat and cheese together if desired

next layer is meat/cheese

layer again with tortilla until you have a lasagna like pattern

bake for 35-45 mins

Top with salsa, onions, sour cream and cilantro

Tamale Pie - Mix together 6 Xlente tamales cubed (comes in a package in refrigerated section of grocery store), one half pound cheddar cubed, one can chile con carne, one can corn (drained), one can creamed corn, one small can sliced black olives, one small can diced ortega or jalapeno chiles (or both), and one small onion chopped. Top with shredded parmesan cheese and bake uncovered at 350 degrees for 45 min. to an hour.

Chili Cheese Tator Tot Cassarole

1 lb lean ground beef
1 lb ground turkey
1 (**40 ounce**) can chili con carne
3-5 cups shredded Mexican blend cheese
1 (28 ounce) bag ore ida extra crispy tater tots ( I usually need a second bag to cover the entire dish)
1 dash Tabasco sauce, here and there

Directions

1. Brown the ground beef and ground turkey together. Season as you like. (I used Lemon Pepper, Salt, Cumin, and Garlic Powder)

2.I used a 13 x 9 rectangle glass Pyrex dish.

3.Put the meats in the casserole dish.

4.Pour the can of chili over the meats and blend together, pat down into the dish.

5.Sprinkle the grated cheese liberally over the meat-chili mix, create a NICE EVEN layer of cheese from edge to edge.

6.Pour the Tater Tots out of the bag onto the top off the cheese and even them out so they heat evenly, sprinkle a little seasoning over the top if you like.

7.Bake at 350 degrees for about 35 to 40 minutes, until tater tot are heated and cheese is melted. ( I usually have to bake mine for 50 minutes ot an hour in order for the cheese to melt and the tots be crispy. If you have a *convection* oven, try cooking it at 335F for 35-50 minutes to cook it more evenly.)

8.When done, scoop onto platters and serve.

Chicken Taco Bake..

3 -4 Chicken Breasts Boiled (or cooked inthe crock pot for about 4-5 hours)

2 10oz cans of enchilada sauce...

1 can cream of mushroom soup

8-12 oz of tortilla chips (Mission CHips work the best) CRUSHED



Once the chicken is cooked then shred it using two forks. Place in a mixing bowl and add the enchilada sauce and mushroom soup.. Mix well. Crush the chips. Then put the crushed chips in a greased baking dish. Add the chicken mixture and then top with shredded cheese. You can add some olives and green chilis to the top to spice it up. Bake 35-40 mins, 375 degree



The type of enchilada sauce is up to you. Mild to spicy. Also good with a spoonful of sour cream on top. You can add an onion for more flavor!!



My whole family loves this dish. Its easy to make and good leftiover!!

I got this recipe from the Emerle(sp) food show. He had a contest and this recipe was submitted by a guy and he won the contest. It' real easy and quick to throw together.
Southwestern Taco Pie
1 pound beef or turkey
1 package Taco seasoning
1/3 cup water
1 tablespoon oil
1 (1 pound package frozen green, yellow and red peppers and onions
1teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon pepper
1 (11 oz) can while kernel corn, drained
1/2 cup salsa
1 package of refrigerated pie crust, softened as directed on package
2 cups shredded cheese recommended: Colby/Monterey blend or Mexican blend
Garnish:
Sour cream
Taco Sauce
Preheat oven to 400 degrees F.
Brown beef in large skillet over medium-high heat for 8to10 minutes or until thoroughly cooked, stirring frequently . Drain. Add taco seasoning mix and water; mix until ground beef is well coated'
Meanwhile, heat oil in large saucepan over medium high heat until hot. Add peppers and onions; cook 4 to 5 minutes or until tender, stirring occasionally. Remove from heat and drain excess liquid. Add garlic and onion powders, salt pepper, corn, and salsa, stir well and set aside.
Prepare crusts as directed for 2-crust pie using a 9-inch glass or metal pie plate.
Combine salsa and corn mixture with ground beef; mix well. Sprinkle 1/2 cup of cheese evenly in bottom of unbaked crust-lined pan. Spread half of beef mixture evenly in pan over cheese, pat down. Sprinkle 3/4 cup of cheese in pan and spread evenly with remaining beef mixture, pat down, to with the remaining 3/4 cup cheese. Top with second crust and flute; slit in several places.
Bake for 30 minutes or until the crust is golden brown. Cover edge of crust with strips of foil after 15 mintues of baking. Let stand 5 minutes before serving. Store in refrigerator.
Garnish with sour cream and a drizzle of taco sauce.

Prep time: 20 minutes Cook time: 30 minutes

I just found one that's great and my family loves. It's called Mexican Cornbread. It's really easy and fast. I hope it helps.

1 pound ground beef or turkey

1 can creamed corn

1 can whole kerrnel corn

1 can mild rotel

3 packages of cornbread mix and the ingredients it call for.

1 package taco seasoning

shredded cheddar cheese

Preheat oven to 350 and grease the bottom of a 9/13 pan

brown your meat and add the taco seasoning acording to the package. While your meat is cooking make the cornbread and add half of each can of corn and pour half of mixture in bottome of your pan. Mix meat and remaining ingredients (excluding cheese) on top the cornbread. Add some cheese to top and then pour rest of cornbread on top of the mix and add more cheese to top. Bake until golden brown, about 20-25 min.

Hi this is a recipe I threw together for mexican pizza. Not exactly a casserole but the kids LOVE it!!!

INGREDIENTS:
1pound ground beef
salsa (as hot as your family likes it) i usually use pace medium
1 pkg taco seasoning
1/4 c water
shredded cheese ( again this can be spicy or mild cheeses) I usually use pepper-jack
1 pre-formed pizza crust (i use Buboli's)

1. brown beef-drain
2. add meat, water, & taco seasoning mix together in pan and cook till water is gone.
3. Add salsa till good consistency, cook till heated through
4. put crust on a pizza pan then add the meat mixture on the top of crust leaving a circle around the edge uncovered as you would with regular pizza
5. spread the cheese until meat mixture is covered
6. put in pre-heated oven of 400 degrees till cheese is completely melted

My kids have always begged me to make this. You can tame it down or make it as spicy as you can stand.

This makes a lot, so you might want to divide it in two and freeze half.
6 boneless, skinless chicken breasts, sauteed with chili & garlic powders then cubed
14 oz. pkg. tostadas, crushed
2 cans cheddar cheese soup, undiluted
1/4 cup diced pickled jalapenos
1-2 8 oz. bags grated sharp cheddar cheese

Season the chicken with chili powder & garlic powder, Salt & pepper to taste. Saute' until thoroughly cooked then cut into cubes. Mix undiluted cheese soup, jalapenos, crushed tostadas & chicken until evenly coated. Top with grated cheese. Bake at 400 degrees until bubbly and cheese is brown, about 20 minutes. Serve with corn and seasoned black beans.

Hope this helps: Tortilla Casserole--1 lb. ground beef, 1 lg onion, 1/4 t garlic powder, 2 Tb. butter, 1 sm can of ripe olives, 18 oz. tomato sauce, salt & pepper, 1 Tb. chile powder, a bag of tortilla chips, 1/2 lbs of cheddrer cheese, 2/3 c of water.



Brown meat, onion and garlic in butter. Add olives, tomato sauce, salt and pepper to taste and chile powder. When done in a 2 qt casserole dish alternate meat sauce chips and shredded cheese. Then Sprinkle with cheese and add water. Cover and bake 30 mins at 400 degrees

Tostada Hotdish
(My husband's favorite--and good reheated, too!)

1 lb ground beef - browned
1 pkg taco seasoning
1 can refried beans
1 small can chopped green chilis
1 can tomato sauce
chopped onion as desired
1 cup Bisquik
2 eggs
1/2 c. milk
2 cups cheddar cheese
8 oz sour cream

Preheat oven to 375.

Brown beef with onion. Drain. Add tomato sauce, taco seasoning & chopped green chilis and refried beans. Stir together.

Meanwhile, mix together 1 egg, Bisquik & milk. Pour in the bottom of a greased (or no-stick-sprayed) 7x11 baking dish.

Top with meat mixture.

Combine in a separate bowl: cheese, remaining egg & sour cream.

Spread over meat.

Put in oven and bake for 30 minutes.

We like to serve this with taco fixin's (chopped tomato, lettuce, cheese, etc.) and Doritos.

Kids LOVE.

cut up cooked chicken and mix with cheese.

roll in tortillas or layer.

for sauce mix chicken broth (1 can) with 1 tub of sour cream, a little flour to thicken. pour over tortillas, top with cheese. bake until hot and bubbly. can spice up as much as you want

I copied this recipe for mexican casserole from my Busy People's Low-Fat cookbook. I think it is perfect for you - quick and easy and only 7 ingredients! Plus it is delicious! Mexican Casserole

This no-bake, no-boil casserole is the answer to satisfying hungry tummies quickly.



1 (1 1/4-ounce) packet taco seasoning mix

2 cups hot water

1 (7 1/4-ounce) box macaroni and cheese—Do not make as directed on box.

1 cup salsa

1 (15-ounce) can whole kernel corn, drained

1 pound ground meatless or cooked, ground, extra lean turkey breast

3/4 cup fat-free sour cream



• In a 2-quart, microwavable, covered casserole dish mix the taco seasoning, hot water, macaroni and cheese, salsa, corn and ground meatless until well mixed and the dry cheese mixture from the macaroni box) is dissolved.

• Cover and cook for 8 minutes on high in a carousel* microwave.

• Carefully remove the casserole lid so you don’t get burned from the steam. Mix well.

• Cover and continue cooking on high in the carousel microwave for an additional 6 minutes.

• Stir in the sour cream. Cover and let sit for 2 to 3 minutes before serving.



*Note: If you do not have a carousel microwave, turn the dish a quarter turn every 2 minutes.

"Ortega Taco Casserole"



1lb. ground beef

1 small onion, chopped

1 cup (8 oz. bottle) Taco Sauce

3/4 cup water

1 can (4 oz.) diced green chiles -optional-

1 pkg. taco seasoning mix

1 pkg. (12) white or yellow hard taco shells, broken, divided

2 cups (8oz.) shredded mild cheddar cheese, divided



--grease11x7 in. baking dish (I used 13x9)

--Cook beef and onion in skillet until beef is browned, drain.

--Stir in taco sauce, water, chiles, and seasoning mix

--Cook over low heat 3-4 minutes.

--Layer half of broken taco shells on bottom of baking dish. Cover with half of meat mixture, sprinkle with 1 cup of the cheese.

--Repeat with remaining ingredients, ending with cheese

--Bake for 20-25 minutes or until bubbly and cheese is melted.

--We eat this topped with sour cream, black olives, and extra taco sauce. Can use any favorite taco toppings.

Mexican Chicken



3-4 boneless, skinless chicken breasts, cooked and chopped into chunks

1 can cream of chicken soup

1 can ro-tel tomatoes

taco flavored Doritos

mexican blend shredded cheeses



Cook and chop up chicken. Mix in casserole dish with soup and tomatoes. Top with crushed Doritos and then cheese. Bake at 350 until cheese is melted. Sooo yummy :)

1) Taco Casserole

ground meat- 1-2 lbs depending on family size

refried beans- 1-2 cans " " (can also sub w/ chili)

shredded cheese- as much as you like

tortillas- your preference of corn or flour

onion- optional

taco seas- 1 pk per lb of meat

You can also add canned corn, canned tomatoes w/chilis, mexican corn. Another option is to add enchilada sauce to the meat mixture and top the casserole w/enchilada sauce.



Preheat oven to 350*. Cook and drain meat and onions. While meat is cooking layer a pan w/tortillas. When meat is done, add beans and seasoning. Stir until completely mixed. Once mixed turn off heat and make layers of cheese, meat mix, and tortillas until meat mix is gone. Add top layer of tortillas and cheese. Cook in oven for 10-15 mins until hot all the way thru. Cut into squares and serve. Top w/ sour cream and salsa optional.

When freezing place on cookie sheet in single layer squares then put in plastic bag. When you want some you can just take out as much or as little as you need.

Here is my version of Green Chicken Enchillada Casserole; my husband's favorite!!! :)



Ingredients:

1 - 28oz. can "Las Palmas" green chile enchillada sauce (choose either mild/med./hot)

1 - med. onion finely chopped

1 cup of chopped cilantro (reserve 1 tbsp.)

1 chile jalepeno seeded and finely chopped (optional)



1 lb. monterrey cheese shreded (reserve about 1 cup)

about 18 corn tortillas (maybe more depending how deep your dish is)

3-4 chicken breast pre-cooked and shreded (or you can always use 1 store bought rotisserie chicken, instead)

about 1 handful of sliced black olives (optional)



First, in a large sauce pan combine the sauce, onion, and cilantro, and jalepeno. Then let that simmer for 10 mins., then take out 1 cup of the sauce, and set aside. (this will be used for the top layer!) Then add all the shreded chicken, and let the sauce to continue to simmer.



Then, lightly fry each tortilla in either veg. oil or olive oil, and set the tortillas on a plate with paper towels to soak up any oil. Once you are done with that then you can begin to layer the casserole. First, spread just the sauce (about 1/3-1/2 cup), then place six torillas on top of sauce, then add the sauce w/ chicken mixture, then some cheese, and repeat with the torillas, etc. Then for the top layer, use the reserved sauce without the chicken, and then top with cheese and olives, and cilantro. Bake in 400 degree oven for 20 mins. covered with foil. Then wait about 10-15 mins to let it sit, before serving. I serve this with sour cream!!!! i make a enchillada casserole my family likes it. tear up corn tortillas and layer taco meat cheese and enchillada sauce i use mild so it ain't to spicy. keep layering it till ur crockpot is full and cook on low for about 2-3 hrs depends on when it looks done and the tortillas are soft.
