Apple or Tomato recipes??

Help!! My 4 year old had a field trip yesterday to an apple orchard and braught home a backpack full of apples lol I need some apple recipes. Also am looking for any new tomato recipes, tomatoes are all ripening at the same time.....

Applesauce......peel and cube apples (minus core & pits), sprinkle to taste at your liking of Cinnamin, white sugar & a dab of nutmeg with 1/4 cup water in crock pot. 4 hours on low occasionally stirring.

Spiced Apple Bread......

2 C. flour

1 tsp. salt

1 tsp. baking powder

1/2 tsp. baking soda

1 tsp. cinnamon

1/2 tsp. nutmeg

1/4 tsp. cloves

1/2 C. shortening

2/3 C. dark brown sugar, firmly packed

2 brown eggs, unbeaten

1 C. grated raw apple (2 medium)

1/4 C. buttermilk

1/2 C. chopped walnuts

Sift together first seven ingredients; set aside. In mixing bowl combine shortening, sugar, and eggs, beat well. Stir in apple and about half of sifted dry ingredients. Add buttermilk and blend. Add rest of flour mixture and stir just until well mixed. Blend in nuts. Pout into greased loaf pan and bake at 350 degrees for 60 minutes, or until done when tested. Cool on rack.

Fresh Lite Tomato Sauce

boil tomatoes (10-12) for about 5-8min, peel & core

add into blender and chop/liquify

grate 5 fresh garlic cloves into olive oil

saute 2 min (do NOT brown garlic)

stir in tomato

simmer 20min, stirring occasioanlly

chop fresh Basil leaves....about a handful

add to sauce and simmer an additional 5 min.

This sauce is lite and I like it in the summer best. Its also best served with either fresh pasta or the Barilla Piccolini Mini Bow Ties. You can then mix it all together, pour into a pasta dish and add some pretty fresh sprigs of the Basil leaves on the corners to dress up. Serve with buttered baked Bauquette Bread!!!

Simply Core the Apples,(they make a utensil that just cores the apple it doesn't cut it into pieces or anything) Place them in a baking dish drizzle with some maple syrup and Raisins bake at about 350 to 375 about 30 minutes.. or tender to your liking. Great dessert to make while using the oven for dinner anyway. PS you can peel the apples if you dont like the skins and dust with cinnimon then drizzle with maple syrup.

Mozzarella,Tomato,and Basil Salad.

3 or 4 ripened tomatoes

4 ounces fresh mozzarella

10 to 12 fresh basil leaves

extra virgin olive oil

balsamic vinegar

salt and pepper to taste

Slice tomatoes.Cut mozzarella into thick slices,arrange tomato,mozzarella on a plate alternating slices.Garnish with basil leaves drizzle with oil,vinegar salt and pepper.My family loves this.
