Artichoke Chicken

This recipie has been a hit whenever I make's delish I promise!

4-6 boneless skinless chicken breast halves
1 1/2 c mayo (no salad dressing)
3/4 c shredded Parmesan cheese (splurge on the good stuff)
1 small jar of artichokes in brine or olive oil drained and diced
pinch of garlic powder

preheat oven to 375
place chicken in large baking dish
mix all of the other ingredients in a med bowl until well blended
place mixture on top of chicken
bake for about 45 min or until juices run clear...topping should be browned and bubbly

I usually serve this with mashed potatoes and a veggie or salad with oil and vinigrette
