Balsalmic Roast Chicken

4 to 4 1/2-pound frying or roasting chicken
1 tablespoon rosemary
2 tablespoons of minces or chopped garlic
1/4 teaspoon salt
3 tablespoons extra-virgin olive oil
ground pepper
2 tablespoons of seasoning salt or poultry seasonings
4 tablespoons balsamic vinegar



 



1 tablespoon of brown sugar



 



Rinse the chicken under cold running water. Dry it thoroughly inside and out. Put all seasonings except brn sugar and balsalmic vinegar in a little bowl and whisk together.



 



Rub the olive oil over the chicken, then rub on the herb mixture. Mix the balsalmic vinegar and brwn sugar together and pour this over the chicken.



 



Preheat the oven to 350 degrees.



 



 Roast 20 to 25 minutes per pound  Baste every 30 minutes or so with the pan juices. When done let sit for 30 minutes (this is how I make sure my chcicken is always moiste)



 



Carve and serve
