I am going to attempt to make banana bread today and I am looking for some recipes. Anyone have a good one?

i add a small can of crushed pineapple to any recipe....it turns out moist every time....a friend told me of it and it works in zucchini bread too....i always get compliments

Here is my mother in law's recipe, that I really like. I use it to make muffins also.
1/2 C Stk Margerine
1 C. Sugar
2 eggs, well beaten
2 C Flour
1 tsp. salt
1 tsp baking powder
1/2 tsp. soda
2 T. milk
1-1/2 C Mashed Banana
1/2 C. Chopped Nuts (optional)

Preheat oven to 350 degrees. Cream butter and sugar together, add well beaten eggs. Add flour, salt, baking powder, and soda alternately with combined milk and bananas. Mix batter after each addition until smooth. Stir in chopped nuts (optional). Pour into a well greased bread pan. Bake 55-60 minutes. Makes one loaf. Allow to cool before removing from pan.

* When tooth pick comes out clear, bread should be done cooking.

My easy low fat low sugar banana bread.





100g butter

100g sugar

2 eggs

3 medium bananas mashed

250g plain flour

1 tsp bicarb of soda

1 tsp baking powder

1tsp salt.



Preheat oven to 150o c, line bottom of a 2lb load tin with parchment paper.

Beat butter and sugar together, add eggs and beat again. Add bananas then stir in rest of ingredients. Pour mixture into tin and cook for about 1hr-1hr15 until a skewer comes out clean. Wrap in cling film whilst still warm to keep bread moist.

Enjoy.

Hey Allison, I tried the recipe I submitted earlier and did not care for it a whole lot. My boys enjoyed it though. I just found this other one and am going to try it right now...



1/2 cup margarine, softened

1 (8 ounce) package cream cheese, softened

1 1/4 cups white sugar

2 eggs

1 cup mashed bananas

1 teaspoon vanilla extract

2 1/4 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

3/4 cup chopped pecans

2 tablespoons brown sugar

2 teaspoons ground cinnamon



DIRECTIONS

Cream the butter or margarine and cream cheese together. Gradually add the white sugar, and continue beating until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the mashed bananas and vanilla. Add flour, baking powder, and soda; mix until batter is just moist.

In a small bowl, mix together chopped pecans, 2 tablespoons brown sugar, and cinnamon.

Divide 1/2 batter into two greased and floured 8x4 inch loaf pans. Sprinkle pecan mixture over batter in pans, and top with remaining batter.

Bake at 350 degrees F (175 degrees C) for 45 minutes, or until an inserted toothpick comes out clean.



I hope this one is better than the last. It was good; just not as good as I had hoped. I was trying to get away with simplicity, i think.

I don't have my recipe with me right now, but the trick to moist banana bread is adding about a 1/2 of sour cream. I usually add mine to the mashed bananas and then mix it in.

Cream margarine and sugar until smooth. Beat in eggs, then bananas. Add flour and soda, stirring just until combined.

Pour into prepared pan and bake at 350 degrees F (175 degrees C) for about 1 hour (or till toothpick comes out clean). Remove from pan and let cool, store in refrigerator or freeze.
