Carrot Cake

2 cups flour

2 cups sugar

2 tsp baking powder

1 tsp salt

1 tsp cinnamon

1/4 tsp ground clove

1/4 tsp nutmeg

4 eggs

1 1/2 cup oil

3 cups grated carrots

1 cup walnuts



Mix all dry ingredients. Beat eggs, add oil and carrots, mix well. Combine with dry ingredients, mix thoroughly, batter will be thick. Bake 350 degree oven for 35 -45 minutes, if using 9x13 pan. If using 2 - 9 inch cake pans may take up to one hour to bake.



Icing: 1 8 oz cream cheese

1 lb box confectioners sugar

1 stick butter

2 tsp vanilla



May sprinkle crushed nuts on top of cake.....excellent carrot cake recipe

This sound real good, I also use drained pineapple and grated tart apple in my carrot cake, and some raisins, as my hubby does not like walnuts.
