Have any good and simple casserole recipes? Ones that you end up making a couple of times a month, because everyone loves them.

Preferably chicken, ground meat or vegetarian casseroles.

Thanks!

Baked spagetti
1 lb sausage browned
1 jar favorite spagetti sauce
1 cup parmesan cheese
5 cups noodles
1 1/2 cup mozzarella
mix everything in a baking dish and bake at 350 for 20 to 30 minutes Great with garlic bread

This next one I make when we have out of town guest staying with us but is also good if you have a large family or for a children's sleepover party breakfast. It's much healthier than doughnuts and easier than pancakes or waffles. It's best with an overnight chill time for prep so best done the night before.

Breakfast casserole
6 eggs
2tablespoons sliced green onions
6 slices texas toast style bread
1 cup grated cheese
1 cup half and half
salt and peper
1 lb breakfast sausage

beat eggs ad onions and half and half, season with salt and peper.
Butter a pan or use nonstick spray line the pan with the bread spinkle sausage and cheese over them and pour in egg mixture
cover and refrigerate overnight
Preheat oven to 350 and bake for 25 to 30 minutes.

I love making a Mexican lasagna. I replace the lasagna noodles w/ tortilla, replace the marinara sauce w/ salsa and then just layer the various ingredients (salsa, tortillas, refried beans, taco meat or shreded chicken, cheese). Repeat the layers until your pan is full and bake at 350-ish until bubbly.

My family loves tater tot hotdish made w/ Jimmy Dean's light sausage instead of hamburger (bag of tater tots, a couple cans of cream of mushroom soup, a cup or so of sour cream, browned suasage and some grated cheese).

I also make one w/ a pound of hamburger browned w/ green peppers, onions and taco seasoning. I add a can of tomatoes, three cups cubed hash browns that have been thawed and 8-12 ounces Velveeta. I just let that one cook in my stir fry pan on the stove until it is hot and bubbly. This recipe also calls for corn by my husband does not like corn in things.

Hi Monica,

Here is my family's favorite. It's even set up for you to make it in multiple batches, then you can freeze the extras for another night! It's from Pampered Chef's Power Cooking collection, and calls for their Greek Seasoning, but you should be able to find a substitute.

Enjoy!

Make-Ahead Chicken
1 lbs boneless, skinless chicken breasts or thighs
1 tbsp vegetable oil

Cut chicken into ½-in. cubes using Chef’s Knife.

Heat oil in 12-in Skillet over medium-high heat 1-3 minutes or until shimmering. Add chicken and cook 7-10 minutes or until chicken is no longer pink, stirring occasionally. Drain chicken, if necessary.

Greek Chicken and Orzo Skillet
To prepare and freeze:
1 portion “Make-Ahead Chicken”
2 medium zucchini, cut into ¼-in pieces
1 can (15 oz) garbanzo beans, drained and rinsed
1 can (14 oz) garlic and onion flavored diced tomatoes
3 tbs Greek Rub

In Bag 1, combine chicken and zucchini In Bag2, combine beans, tomatoes, and rub.

To finish and serve:
2 cans (14 oz) each chicken broth
½ cup water
1 lb uncooked orzo
2 oz crumbled feta (optional)
black olives (optional)

To cook and serve immediately:
Add contents of Bag 2, broth and water to 12-in Skillet; cover and bring to a simmer over medium-high heat.

Reduce heat to medium, add orzo. Cover and cook 5 minutes (or halfway through cooking time according to package directions), stirring occasionally.

Add contents of Bag 1. Cover and cook 5-7 minutes or until orzo is tender and zucchini begins to soften. Remove from heat; top with feta and olives, if desired.

To cook and serve from freezer:
Add contents of Bag 2, broth and water to 12-in Skillet; cover and bring to a simmer over medium-high heat. Cook 8-10 minutes, breaking contents apart as necessary.
Proceed as directed above.

Tuna Fish Caserole

1 large box Kraft Mac & Cheese
1 can Cream of Mushroom Soup
2 small cans of Tuna or 1 large
1 can peas

Cook Mac & Cheese according to directions on box.
After Max & Cheese is done:
Add soup, Tuna & peas

If you want you can put caserole into a dish & bake in oven at 350 degrees until bubly, but not necessary, can just continue to heat on stovetop for a few minutes, but be sure to stir the whole time warming or the pasta will burn to the bottom of the pan.

What a great idea, Chastity. I will have to file that away in my memory bank. We are in the middls of swim lessons and I love having things that I can throw in the oven to cook so dinner is done when we get home.

I do something just like Tami, only I use regular sausage, brown it in a skillet first then I cut up some potatoes to layer the bottom, then add some sausage, then sprinkle some shredded cheese and keep doing that until it fills up my baking dish. Then I blend a can of mushroom soup with about a cup of milk or whipping cream and pour all over. My kids and husband love it. It's a reciepe my grandmother makes. Like I her I don't go by actual measuring I just add the amount of cheese we like, use a pound of sausage, the 1 can on for mushroom soup and I think last time I cup up 3 potatoes. It just depends on if they are big ones or small.

This week I made a great and super simple casserole type dish out of kielbasa (try the turkey or the "light" kielbasa). I lined a 9x13 pan w/ a huge piece of foil and left lots hanging over the sides. Sprayed the foil heavily w/ non-stick spray. Sliced three large baking potatoes super thin and layered them overlapping somewhat to cover the bottom of the pan. I seasoned them w/ pepper (skip salt as the kielbasa will add tons of salty flavor) and put 3/4 - 1 c. shredded sharp cheddar over the potatoes. I sliced a turkey kielbasa into bite size pieces and layered that over the cheese, topped w/ another 3/4 - 1 c. shredded cheese and sprinkled w/ 1/4 t. corriander seeds and 1/2 t. dried dill weed. I dumped 2/3 c. milk over the whole dish and sealed the edges of the fil tightly so the whole thing was encased in a giant foil packet. I baked it at 375-ish for 60-75 minutes, until the potatoes were done. It was super delish!

When I make my Mexican lasagna I prefer chicken that has been cooked in the crock pot all day w/ a jar of salsa and then a brick of cream cheese thrown on top for the last hour. Stir the whole thing together and it just falls apart and makes amazing shredded chicken. I have also used taco meat (ground beef or turkey w/ taco seasoning). I sometimes use fat free refried beans but prefer black beans. I use whatever shredded cheese I happen to have in the freezer at the time. We prefer a medium salsa for the "sauce" but I have used mild when feeding anyone but my family. Corn tortillas will have a firmer texture and flour will be softer. I usually have flour tortillas or whole wheat on hand so that is what I use.

Have you looked at The Pampered Chef cookbooks? They have loads of great recipes, and most are simple to throw together. Many can be prepared in the microwave for faster preperation, and taste amazing. My favorite is the Grilled Chicken Penne Al Fresco. Another, Asian Pork and Noodle Skillet uses Ramen Noodles and pork tenderloin. Need more info, visit www.pamperedchef.biz/kathypaparella or contact me at k_paparella@hotmail.com

How about a breakfast casserole? Stouffers, I think, came out with this new breakfast casserole. I decided instead of paying $5 per box and probably need two or three for my family I would recreate it myself.

It has the following ingredients:

Hash brown potatoes (the little ones) thawed (If you use frozen you will have to cook them a little while first because they come out in bunches that don't break up easily plus the casserole takes longer to cook)
Scrambled eggs (about a dozen and a half for my family of 5)
Scrambled sausage (one package of the rolled sausage works)
Country gravy (you buy it or make it yourself. I buy country gravy with sausage in a can, about three cans works depending on the size of the pan)
Shredded cheddar cheese on the top

I put the potatoes down first and usually cook those for a short time because I always forget to thaw them first.
Scramble the eggs and the sausage.

The bottom layer is the potatoes. I usually spray the dish with vegetable spray first so nothing sticks. After the potatoes I put down a layer of the eggs. Then the sausage. Then put gravy over the top. And top with a sprinkle of cheese. I don't use a lot but you can use how ever much you want.

I haven't found an exact temp and time yet that works yet as I have only fixed this twice but it is really good once it finally does cook through.

The potatoes are what takes the longest if they are frozen.

I love corned beef casserole and sausage/squash casserole....both are very easy:
First -
* 1 (8 ounce) package uncooked small shells
* 1/2 pound shredded cheddar cheese
* 1 onion, chopped
* 1 (12 ounce) can corned beef
* 2 (10.75 ounce) cans condensed cream of chicken soup
* 2 cups milk
Directions

1. In a large bowl, mix together the noodles, cheese, onion, corned beef, soup, and milk.
2. Place this in a lightly greased 9x13 inch baking dish
3. Preheat oven to 375 degrees F (190 degrees C).
4. Bake in preheated oven for 1 hour.

Second -
I can't find the exact recipe I used, but it only needed eggs, pepper, summer squash, Italian sausage, and breadcrumbs i think....it was so good - there are a ton of variations on this online....have fun trying some out! YUM!

Okay, Sausage and Rice Casserole:

1 lb sausage, ground or in patties, but NOT link (Jimmy Dean is my mom's fav)

1 cup regular rice (NOT minute rice)

1 package Lipton chicken noodle soup mix (the box comes with 2 packages, but only 1 is needed)

2 tablespoons worsteshire sauce

4 cups boiling water

1/2 onion, finely chopped (optional) OR dried onion flakes (what my mom usually uses)

1. Preheat oven to 350 degrees F

2. Brown sausage and drain

3. Mix ALL ingredients into a large oven safe dish/container (my mom uses her 5 quart baking dish)

4. COVER and bake for 1 hour

YUMMY!!! Also, if you use the right baking dish and leave it in the oven for an extra 10 minutes or so you get little burt peices on the outer edges - super yummy!!! This is one dish where we never minded if my dad burned it! lol

I can't make this for my family now (because my hubby can't eat sausage because it's too spicy for him), but my mom makes it for me every time I come to visit! :)

So here's one that my four year old will eat heapings of...measurements aren't exact because I normally just eyeball it!!

Mexican Casserole

Ingredients
1 lb ground beef
packet of taco seasoning (or your own mix)
frozen corn (about a cup-more if you like corn!)
1 can rotel tomatoes and green chiles
1 can black beans-drained
1 can refried beans
1 package medium size soft tortilla shells
1 package mexican blend of cheeses

Directions
1. Preheat oven to 350F
2. In skillet, brown meat and add taco seasoning (I add about half the water or less that the seasoning packet requires)
3. Add frozen corn, can of rotel, and drained black beans and heat through.
4. In casserole dish (or two round pie/cake pans) add a small amount of the meat mixture to prevent sticking. Then layer on tortilla shells, refried beans, meat mixture, and small amount of cheese (optional). Repeat the layers until to the top of the pan (usually about 3 layers) and then top off with the cheese blend.
5. Put into oven for 15-20 minutes until cheese is melted!

I really kinda made this recipe up from looking at some other similar recipes so you can play with it and add or take away as you please! Add a little sour cream when you serve it for a cool topping!

[deleted account]

I also have a really good sausage and rice caserole, but my mom has never written it down and I can't ever remember it, so I'll have to call her and get it - I'll post it as soon as I do! :)

[deleted account]

Tater Tot Casserole

1 lb ground beef

1 can condensed cream of mushroom soup (I use Campbell's)

1 can condensed cream of celery soup (once again, I use Campbell's)

1/2 package Tater Tots (I use Ore Ida 32 ounce bags)

1. Pre-heat overn to 350 degrees F

2. Brown the ground beef. Drain and put into an 8X8 baking dish.

3. Put in tater tots until they completely cover the ground beef and fill the rest of the dish.

4. Spread both cans of soup over the top (do not stir in with tater tots, just spread over the top).

5. Bake for 1 hour.

6. Serve and enjoy!

This is my dad's favorite meal ever! :) My hubby doesn't like casseroles, so I don't make it that often now, but it was one of my standby favorites before I moved out of my parent's house (I was expected to cook at least one night a week).

It's also good with ground turkey if your family doesn't eat beef :)

Edited to add: Dang! Desiree already wrote a version of this :D I've never heard of doing it her way though, I'll have to try it some night! The way I wrote it above is the way my mom taught me and I just always assumed she made it up! lol

Darn all of my recipes are still packed.Let see what I can remember.

No peek beef Tips
1.5 pounds of cubed beef
1 can cream soup
1 can mushrooms
1 soup can of water
1 envelope dry soup

Layer in either crockpot or oven proof casserole with lid. In crockpot cook for 8 hours on low. In oven cook for 3 hours at 300. Stir and serve on your choice of starch. Could also stir in vegetable though we don't.

I like this one though it may not be considered simple. I add oil/butter as needed and season as needed.

Cheddar chicken and potatos
4 slices of bacon
4 boneless chiken breasts
4 cups frozen hashbrowns thawed
shredded cheddar cheese

Dice bacon and brown in large fry pan. Remove and drain. Brown chicken breast in pan until cooked through. Remove and keep warm. Brown hashbrowns in skillet. Stir in diced bacon. Put chicken breasts on top of potatoes and sprinkle with cheese. Cook until cheese is melted.

Lamb and polenta "lasagne"--search for it under that name on Epicurious.com. It has only 5 ingredients, and they are budget-friendly (ground lamb can be hard to find, but it's cheap and a nice alternative, but you can also use hamburger with this). This is also great as leftovers.

We make the Shipwreck with macaroni instead of potatoes. It all comes together on the stovetop quickly.

Swiss Kiss Chicken
1 chicken breast for each person
1 slice cheese for each
1 box stuffing mix
1 can cream soup
1 can milk
Layer chicken, cheese & stuffing mix in 9x13 pan. Mix soup & milk and carefully pour on top. Bake at 350 til chicken is done. Cover with foil or add more milk if stuffing looks too crunchy.

Shipwreck!! :) It's my absolute fave! So good I make this hearty meal during the summer!

Ingredients:
1 lb Ground Chicken, Beef, or Turkey (I bet you could sub extra firm tofu as well!)
3 regular size cans of Pork n' Beans
1 can (heart healthy) Tomato Soup
1 Half/Whole Onion (to taste - can leave out, but adds great flavor)
2-3 medium sized potatoes

Directions:
Preheat oven to 350*. Brown meat in skillet with onion. Cut potatoes into rounds or half moons (I do half-moons for my 2 year old) - put into casserole dish. Add 3 cans of beans & mix. Add meat/onion combo & mix. Bake until potatoes are tender (about 30-35 mins).

Green beans or peas make a great accompaniment.

Hope you enjoy!! :)

(You can also throw all of it in a crock-pot in the AM and it'll be ready for you at dinner on low!)

Garlic powder - mix into tomato soup

1/2 an onion or so - chopped

Layer beef, onion, potatoes, carrots, top with tomato soup. Bake at 350 until veggies are done - about an hour to 1.5 hr.

If you want to change it up, same casserole but on top of carrots, put 1 cup cooked rice, then tomato soup, then chunks of bacon (raw). Bake (covered) at 350 for 1.5 hrs or until veggies soft, then uncover and bake until bacon is crisp. YUMMY!!

Oh, and the veggies you can change up to whatever you have on hand and it's still yummy!

i dont know the name of it but the ingredients are:

depending on the size of your family

3or 4 chicken breast chunked

2 cans of cream of chicken soup

1/2 can of milk

5 carrots cut in small pieces (easy baking size)

3 or 4 potatos depending on the size cut in small pieces (easy baking size)

3/4 can of peas or 1/2 bag of frozen peas.

(and if you like some celery, or corn.)

WITH SOME GREAT BISCUITS

Now after you prep everything you just mix it all up in your casserole dish. cover with aluminum foil, then bake it in the oven on 375f for an hour. Take it out and check your carrots and potatoes. Depending on the size you cut those, they may still be a bit firm. You may need to put it in for another half hour and check it again... When your happy with those, put your Biscuits in and take the casserole out to thicken and cool.

Its very delicious. My family loves it and its great with all the vegys. Any child will eat it.
