This is a great recipe from Pampered Chef--It's super easy! The Deep Dish Baker is a 9-in round pan--you could probably easily make it work in a 9-in square casserole dish if you have to. If you don't want to microwave it, I'd bake it at 350 for 30 minutes.
Beef Enchilada Casserole
1 lb 95% lean ground beef
1 Tbs Southwestern Seasoning Mix
¼ Tsp salt
1 can (10 oz) enchilada sauce
¾ cup water
½ cup medium thick and chunky salsa
12 (6-in) yellow corn tortillas
¼ cup snipped fresh cilantro
1 cup shredded Colby/Monterey Jack cheese blend, divided
Sour cream (optional)

Combine beef, seasoning mix and salt in 10-inch Skillet; cook over medium-high heat 8-10 minutes or until beef is no longer pink, breaking beef into crumbles using Mix ‘N Chop. Add enchilada sauce, water and salsa to skillet. Bring to a simmer and remove from heat.

As beef mixture cooks, place tortillas in a stack and cut into 1-in pieces using Pizza Cutter. Snip cilantro using Kitchen Shears.

Arrange half of the tortillas evenly over the bottom of the Deep Dish Baker; top with half of the beef mixture and half of the cheese. Sprinkle 2 tbsp of the cilantro over the cheese. Top with remaining tortillas, beef mixture and cheese.

Microwave baker on HIGH 3-5 minutes or until cheese is melted. Garnish with remaining cilantro. Serve with sour cream--if desired.

Boil 3 big chicken breasts. If small 4.
Flour tortillas
Mix together in a good size bowl:
1 can of Cream of Mushroom soup
1 can of Cream of Chicken soup
1 can of Rotel Chilies (tomatoes and chilies)
1 cup of Sour cream
Put aside: about 2 cups of shredded Chedder Cheese
Cut chicken into little pieces and add them to the bowl
Rip up flour tortillas into pieces on the bottom of a casserole dish so there are no holes. Scoop half the mixture on top of the tortillas and sprinkle with a handful or two of shredded chedder cheese. Rip up one or two more flour tortillas then pour rest of mixture on top then rip up a one or two more flour toritillas then cover with shredded cheese. (there can be holes between the tortillas on the layers just not the first layer)
bake in oven at 350 degrees for about 30 mins uncovered. Let sit for a few mins (5 or more so it will thicken up a little) Serve. Freezes good too.

Have you tried tuna noodle casserole? My son loves it; he's two. Most people have a recipe, but if you'd like mine, I'd be happy to share.

Taco casserole

1 can corn drained

2 sm. cans tomato sauce

1 to 1 1/2 lbs ground beef browned

1 pkg taco seasoning mix

2 sm. boxes or 1 large box corn bread mix made by directions on box, set aside in bowl

After meat is browned add seasoning, corn, tomato sauce together. My family does not like bitter sauce so I add 1-2 tsps of sugar to our tomato sauce. place this in 9 x 13 casserole dish, spread corn bread mix on top, bake according to directions on corn bread pkg. Yum serve with sour cream, or cheese. I also sometimes add a can of kidney or pinto beans drained and rinsed to the meat mixture, olives might be yummy also! Easy to put together on a busy day!

Pizza Pasta



1 box any type of pasta

1 jar spaghetti sauce

1 stick of pepperoni

1 bag mozzerella cheese



Cook pasta. Cut up pepperoni to the size of your liking. Drain pasta. Put pasta in casserole dish, add pepperoni and sauce. Add cheese on top. Bake at a 350 degrees until cheese is melted (aprox 30 minutes.) Take out of oven with mitts, ready to serve.



Hope you like this - you can add anything you like to put on pizza, either instead of the pepperoni or in addition to it.

Shepherd's Pie (cottage pie)

1 pound lean ground beef

1 medium onion

8 ounces sliced mushrooms

1 can tomato soup

15 ounces green beans

Salt and pepper to taste

Mashed potatoes

cheese



Brown beef, onion and mushrooms until veg is tender and meat cooked through. Combine with soup, green beans and spice to taste. Layer in a 9x11 dripper pan. Top with mashed potatoes and cheese. Bake at 375 for 30-35 minutes until heated through to 180.

TATER TOT CASSEROLE

BROWN 1LB HAMBURGER MEAT AND DRAIN PLACE IN THE BOTTOM OF A SPRAYED CASSEROLE DISH ADD ONE CAN DRAINED GREEN BEANS ON TOP OF MEAT THEN A CAN OF DRAINED CORN ON TOP OF SPRINKLE CHEDDAR CHEESE ON TOP THEN ADD THAT MIX ONE CAN OF CREAM MUSHROOM SOUP OR CREAM SOUP OF YOUR CHOICE WITH 1/2 CUP MILK AND POUR OVER CHEESE THEN PUT TATER TOTS I USE A 32 OZ BAG LAYER ONTOP OF MILK AND SOUP MIX COVER AND BAKE @375 FOR 45 MINUTES THEN UNCOVER AND COOK FOR 15 MIN MORE TILL TOTS ARE SLIGHTLY BRONN

Mexican Casserole

1 lb hamburger meat

1 can rotel

1 can cream chicken

1 can cream mushroom

1onion chopped

1 bell pepper chopped

1 can cheddar cheese soup

2 cups grated cheddar cheese

flour tortillasBrown meat and drain. saute onion and green peppers till soft. add alll soups and rotel in large bowl and mix well. add meat and vegetables and mix well. spray 9x12 pan. tear up tortillas and place on bottom of pan then add a layer of soup ans meat mixture spread well then add cheddar cheese on top of that then another layer of torn tortillas repeat layers till mixture is gone and last layer should be torn tortillas cover and bake for 30 min at 350 then uncover sprinkle w cheese and bake another few minutes until cheese is melted
