Cheesy Bean Crunch

1 large onion

2 rashers of bacon

1 tablespoon of unsaturated oil

1 clove of garlic

1 chicken or vegetable stock cube dissolved in 1/4 pt of boiling water

1 can of chopped tomatoes

2 cans of kidney beans

1/2 teaspoon of chilli powder

pepper to taste

3 slices wholemeal bread

75g cheddar cheese


Peel & finely chop the onion. Remove fat & rind from bacon and chop

Gently heat the oil in a large saucepan, add onion, bacon & garlic. (2 mins)

Add stock & chopped tomatoes.

Drain & rinse kidney beans & add to the mixture. Add chilli powder & pepper.

Bring to boil stirring all the time, then reduce heat, cover & simmer for 20 mins.

Transfer to a ovenproof dish.

Grate or food process the bread to make breadcrumbs. Mix grated cheese to breadcrumbs.

Spoon the cheese & breadcrumbs over the bean mixture. Grill until topping is golden brown.

This recipe is delicious. Remove the bacon & use vegetable stock to suit vegetarians.
