Chicken Normandie - favourite quick, easy and fairly healthy!

Need a large baking dish for this one as apart from the veggies everything goes in one pot! Can increase and decrease amounts to serve different numbers. Ingredients listed serve 4.

Cut 2 medium leeks into 3 inch strips and place into bottom of baking dish. On top of this place 4 gloves of crushed garlic and 250g sliced bacon. Pour 200 ml dry cider over it all - if you like a more cidery flaour then add more. Place 4 large (or 8 small) chicken thighs onto the top - it is less fatty if you remove the skins first. Then sprinkle some thyme over the top, cover with foil and place in oven (200C) for around 40 mins. Check chicken and if only clear juices running out all cooked - cooking time reduced due to being on the bone. Keep the chicken thighs and leek/bacon warm and reduce the remaining juices. Stir in 2 tablsepoons of creme fraiche and mix until fully mixed. Put leeks/bacon onto plate and pour gravy over. Place chicken thigs on top and service with vegetables of your choice.
