Chicken Salad

1 large chicken breast

1/2 stalk of celery

1/2 cup of pecans

1/2 cup greek yogurt

1/2 tsp of curry powder

salt and pepper



Boil chicken breast (with 1/2 tsp of curry powder and salt and pepper to taste) until done. Allow chicken to cool in refrigerator. While chicken is cooling, finely chop the 1/2 stalk of celery and the 1/2 cup of pecans. Once the chicken is cooled, finely chop in food processor. Add 1/2 cup of greek yogurt and the celery and pecans to food processor and combine. Serve chilled with triscuits or as a wrap.



You can also use leftover chicken for this recipe, and just add the spices when you add the celery and pecans. You can also use mayonnaise instead of greek yogurt, or make a mixture of the two. I use greek yogurt for the added flavor and protein.

I like the curry and craisins ideas. I like to use fresh lemon juice, lemon jest, and lots of fresh ground black pepper.

Putting in Craisins sounds really good. I'll have to try that. :-) Sometimes I put grapes or apples in it, or sometimes I use dill instead of curry.
