Chicken with a Kick

The great thing about this recipe is that you can use as little or as much as you desire.
2-3 boneless skinless chicken breasts
1/2c brown sugar (I use splenda brn sugar sub)
3/4c balsamic vinegar ( a really good one)
3 cloves garlic minced
1tsp ground ginger
1tsp crushed red pepper flakes
1tbsp olive oil

Chop chicken breasts into chunks. Place chicken, vinegar, brown sugar and garlic into a bowl. Stir, refrigerate and let marinate between 4-8 hours. Remove chicken from fridge and let stand between 20 and 30 min. Place oil in grill pan and heat to med heat. Before adding chicken to pan add pepper flakes and ginger. Give a good stir and your ready to go. Cooks in about 30 mins depending how much chicken you use. Enjoy :)

Sounds delicious ! Will definately have to try this one.  We eat a lot of chicken at our house and it does get boring ! We try to eat as healthy as we can and this sound pretty healthy (esp. with the splenda substitute).  Thanks for sharing.
