I am a mom that works the night shift. Are ther any good recipes I can make with the crock pot while I sleep a couple of hours when I get off work?

This is the easiest recipe I have ever used and my husband and kids love it.
Taco soup
1lb ground beef
15oz (1 can) black beans undrained
15 oz (1can) kidney beans undrained
28 oz (2cans) diced tomatoes undrained
1envelope dry Ranch mix
1 envelope dry taco seasoning
Serve with tortilla chips, cheese and sour cream as desired.
You can also try adding a can of corn which my mom likes but I don't care for.

put everything in a crock pot for 4-6 hours on medium
the time varies depending on if your meet is frozen or thawed.

BARBEQUE BEEF STEW
* 2 lbs. stew meat
* 3 tbsp. oil
* 1 c. onion, sliced
* 1/2 c. green pepper, chopped
* 1 lg. clove garlic
* 1/2 tsp. salt
* 1/8 tsp. pepper
* 2 c. beef stock
* 1 can (8 oz.) tomatoes
* 1 can (4 oz.) mushrooms
* 1/3 c. barbecue sauce
* 3 tbsp. cornstarch
* 1/4 c. cold water
Saute onion, pepper and garlic in oil. Add salt, pepper, beef stock,
tomatoes, mushrooms and barbecue sauce. Cook in slow cooker/Crock
Pot on low heat 8-10 hours.
Mix cornstarch, cold water and thicken before serving. Serve over hot
cooked rice.

ALL DAY MACARONI AND CHEESE
8 ounces elbow macaroni, cooked and drained
4 cups(16 ounces) shredded sharp Chedder Cheese
1 can cheese soup
1 can (12 ounces) evaporated milk
1 1/2 cups milk
2 eggs
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon dry mustard
Place the cooked macaroni in crockpot that has been sprayed with
nonstick cooking spray. Add the remaining ingredents, all except 1 cup
of the cheese, mix well.
Sprinkle with the remaining 1 cup of cheese and then cover and cook
on low setting for 5 to 6 hours or until the mixture is firm and golden
around the edges. Do not remove the cover or stir until it has finished
cooking.

EASY 3 envelope chicken
Cut up chicken
1 envelope dry chicken gravy
1 envelope ranch dip/dressing mix
1 envelope italian dressing
1 cup of water.

Place chicken in crockpot, sprinkle with dressing mixes. Add gravy mix to water and pour over. Cook on low about 6-8 hrs. Depending on what cut of chicken you use. Serve with biscuits and vegetables. Note: you can even add the veggies in the crockpot!

BBQ Chicken sandwiches

WHole chicken with broth & onion mix

6 to 8 hours

pull out & shred, mix in BBQ sauce

make coleslaw

toast hamburger buns

bake oinion rings

stack in a sandwich

Pork lion
1 pork lion (whole or half depending on size of family)
1 can of coke or dr.pepper
1 bottle of BBQ sauce

Stick in crock pot and forget it for 8 hrs low or 4-5 on high.
P.S. if you get the whole pork lion, I usually cut it in half, just to help it cook better.

Stroganoff
Mix 2 cans of cream of mushroom soup, 1/2 can of water, 1 pkg onion soup mix. Add 1lb of stew meat. Put in crock pot and cook on low for 6-8 hours.
15-20 minutes before eating add 8-10 ounces of sour cream.
Serve over egg noodles.

A pot roast! Put the roast in add some potatoes, carrots, oionins, cerely, and whatever eles you like and some seasoning for taste I perfer everglades and of course add some water almost to the top of the roast!!! Let it cook for 7 to 8 hours on low or about 4 to 5 on high

Chicken breast, salt it and pepper it. Mix a can of cream of chicken or cream of mushroom soup with one can of water. Add a package of lipton onion soup mix. Stir well and pour over the chicken. Cook on low for 7-8 hours or on high for 4-5 hours. You can serve it over noodles with a veggie.
