I'm looking for a good, from scratch, curry receipe. It doesn't need to be kid friendly since nothing is kid friendly lately. : )

I was taught by a friend form northern India to make a lovely authentic chicken curry which starts with cardamom pods, fenugreek seeds, cinnamon sticks etc. And then another good friend from Mauritius taught me this much easier, if less authentic way:

You need:
About 8 drumstick and thigh pieces
One onion
a thumb size stick of fresh ginger
2 Tablespoons of patak mild curry paste
1 can tomato sauce or 1 can chopped tomatoes blitzed in a blender
1 large tub plain yoghurt
1 handful of chopped coriander

Start by sealing your chicken pieces. Then set them aside.
Fry the onion and ginger in a little oil. Add the curry paste to the pot. Mix in the tomato sauce.
Add the chicken and let it all simmer together for at least 45 minutes.
Take the pot off the heat and let it all cool to nearly room temperature. Stir in the yoghurt. You could reheat it straight away, mix in the coriander and serve with basmati. My strategy is to cook it while I'm fixing something else for dinner, then stir in the yoghurt and shove it all on the fridge to have for supper the following night - it is so true what they say about curry getting better overnight!

You can easily adjust the heat by adjusting the amount of curry paste - and the heat of the brand you buy. I've had my kids eating mild curry since before their first birthdays!

And now you've got me all inspired I think I'll just pop off and make a pot!

how about a red thai curry? i know of one with chicken that is fast and delicious serve it with rice.....
3tbsp veg oil
1-3 tbsp red curry paste
1 tin coconut milk
6 fresh lime leaves slivered and soaked on hot water for 10 minutes
2 boneless skinless chicken breats cut up
tsp sugar
2 tbsp fish sauce
1 can bamboo shoots
1 zuccini cubed
1 smal eggplant cubed
2 tbsp fresh basil
heat oil and stir fry paste in it for 1 minute
add 1/2 cup coconut milk and lime leaves
simmer 2 minutes
add chicken cook for 5 more minutes
add remaining ingredients except for basil cook for another 10 minutes or until it is done to your liking add basil serve over can add additional veggies to this -I like carrots and greenbeans and sometimes cauliflower-whatever your family likes really.

I don't do anything fancy just cream of mushroom soup, some portobella mushrooms, whatever veggies I have on hand, curry powder. Mix it up and use it on top of baked chicken and rice. My dad does a poor mans version with ground beef and makes it like hamburger helper. Sounds weird but it is AMAZING! If I make it with beef I like to throw in some corn too.

bake some chicken breasts then in the last few mins of cooking,mix together sour cream and curry, add ontop of chicken breast...its very nummy and my family loves this recipe!
