This one gets me through a crazy day with dinner on the table and a smile on my husband's face!

Easy Chicken Pot Pie:

Preheat oven to 350

Set out 2 refrigerated pie crusts (Pillsbury or whatever store brand you use)

Boil 2 chicken breasts or 5-6 chicken tenders in slated water

Combine 1 can Cream of Celery Soup and 1/2 can of low fat milk in a sauce pan

Add 1 package mixed frozen vegetables (about 12 oz.)

Warm over medium heat stirring occasionally

While mixture warms, cube chicken into bite sized pieces, and add to mixture

Unroll pie crusts and dust the bottom of one with all purpose flour, place in pie pan

Pour entire mixture into pie pan and cover with 2nd crust, seal edges and cut vent slits

Bake until crusts golden (about 20 minutes)

Let it stand 10 minutes and serve!
