Easy cookie dough.



350g/9oz butter-softened 140g/5oz caster sugar

1 egg yolk 2tsp vanilla extract

300g/10oz plain flour



Preheat oven to 180c/ 160c fan/ gas 4.

Mix/cream butter and sugar in large bowl, add egg yolk and vanilla-stir to combine.

Sift in flour and stir until well combined-you might need to use hands to press dough together.

Chill until firm. Roll out between 2 sheets of clingfilm or greaseproof paper until thickness of £1coin. Stamp, cut out shapes and re-roll trimmings to use all dough up. Bake on a nonstick tray for 10-12 mins until pale golden. Transfere to a wire rack to cool and crisp up.



Makes about 30-depending on size.



Choc chunk cookies.



Substitute 50g of cocoa powder for 50g flour and add 170g mixed choc chunks. Mix well. Scoop mixture into balls, lay on tray and flatten slightly. Bake for 12-15 mins at same temp.

Transfere soft warm cookies to wire rack to firm up.

No worries Karen, got lots of different variations with the basic dough too.



Lemon fingers, just add zest of 2 lemons to dough. chill, roll out and cut into fingers with pizza cutter. When baked make icing with 5oz icing sugar and 4-5 tbsp lemon juice, dip cookies into it. dry on a rack.



Almond rounds, Substitute 2oz ground almonds for 2 oz flour, and 2tsp almond extract for the vanilla, add 100g chopped almonds to dough. Roll into log, wrap in cling film,chill. Slice into rounds.



Cranberry and orange, add 100g dried cranberries and zest of 2 oranges to dough. Roll into log, wrap in cling film,chill. Slice into rounds.



cherry and coconut thumbprints just add 100g desiccated coconut to dough. Roll into golf ball sizes. Press thumb into round of dough and put jam into thumbprint. Cool on a wire rack.



and my fav...



peanut butter cookies   just add 100-150g crunchy peanut butter to the dough...
