how about a red thai curry? i know of one with chicken that is fast and delicious serve it with rice.....
3tbsp veg oil
1-3 tbsp red curry paste
1 tin coconut milk
6 fresh lime leaves slivered and soaked on hot water for 10 minutes
2 boneless skinless chicken breats cut up
tsp sugar
2 tbsp fish sauce
1 can bamboo shoots
1 zuccini cubed
1 smal eggplant cubed
2 tbsp fresh basil
heat oil and stir fry paste in it for 1 minute
add 1/2 cup coconut milk and lime leaves
simmer 2 minutes
add chicken cook for 5 more minutes
add remaining ingredients except for basil cook for another 10 minutes or until it is done to your liking add basil serve over can add additional veggies to this -I like carrots and greenbeans and sometimes cauliflower-whatever your family likes really.

I put eggplant in my meatballs!! It make them more moist.

I also use them in stuffed peppers.

6 bell peppers
1 lg eggplant
1c. bread crumbs
1c. parmesan cheese
1 egg
1 10oz can tomato sauce
1 lb hamburger

cook eggplant in little oil to brown add hamburger to brown. Add tomato sauce In bowl mix cheese, crumbs egg and add hamburger mixture. Mix and stuff peppers. put in oven at 350 for 30-45 minutes depending if you like ur peppers crunchy or soft.

i like to slice it thin. dip in egg, then flour, then egg again, and flour again. Fry till little crispy. They taste like apple chips to me
