Balsamic Glazed Salmon (serves 8)
Ingredients:
8 fresh salmon fillets, 3/4-inch thick (about 1 1/2 pounds)
Freshly ground black pepper
3 tablespoons olive oil
4 1/2 teaspoons cornstarch
1 3/4 cup Swanson® Chicken Stock
3 tablespoons balsamic vinegar
1 tablespoon brown sugar
1 tablespoon orange juice
1 teaspoon grated orange peel
orange slices for garnish
Directions:
Place the salmon in an 11 x 8-inch (2-quart) shallow baking dish. Sprinkle with black pepper and drizzle with oil. Bake at 350°F. for 15 minutes or until the fish flakes easily when tested with a fork.
Stir the cornstarch, stock, vinegar, brown sugar, orange juice and orange peel in a 2-quart saucepan over high heat to a boil. Cook and stir until the mixture boils and thickens.
Place the salmon on a serving platter and serve with the sauce. Garnish with the orange slices.
Serving Suggestion: Serve with a brown and wild rice blend and steamed cut green beans.

Here's my simple salmon recipe:
Line baking sheet with parchemin paper for easy clean up:
sprinkle salmon pieces with
olive oil
salt & pepper
bake at 375 for about 10 minutes
top with walnuts and bake another 5 minutes
According to Martha Stewart, the salmon is cooked when the white stuff starts to come out.

i say keep it simple so you dont kill the flavor of the fish. usually i do zesty italian dressing over the fish and bake.. or mrs dash marinades.. the simplest is lime juice, ginger and old bay..

Ingredients
Salt
1 pound fettuccine
3 tablespoons extra-virgin olive oil, 3 turns of the pan
4 cloves garlic, finely chopped
1 small onion, chopped
2 (6-ounce) cans Italian tuna in water or oil, drained (I used Starkist Tuna Creations in Tomatoe Pesto flavor)
1/2 cup tender sun-dried tomatoes, thinly sliced, available in small pouches in produce department
1 cup dry white wine, a couple of turns of the pan (I used chicken stock as a sub)
1 cup heavy cream, a couple of turns of the pan
Black pepper
1/2 cup frozen peas, a couple of handfuls ( I used chopped asparagus as a sub)
Couple handfuls grated Parmigiano-Reggiano
1 cup fresh basil, about 20 leaves, shredded (I didn't use)
1 cup slithered almonds (I added this myself)
Directions
Place pasta water on to boil. Salt water then add pasta and cook to al dente.
While pasta cooks, heat a deep skillet over medium heat with extra-virgin olive oil. Saute garlic and onions until tender, 4 to 5 minutes. Add tuna and sun-dried tomatoes and stir to heat through, another 1 to 2 minutes. Add wine and cook it down a minute then add cream and season sauce with salt and pepper. Toss hot pasta and peas with sauce and cheese. Serve on dinner plates and top with shredded basil.
This is a pretty versatile recipe and it is a Rachel Ray Recipe...I did a few substitutes which I mentioned above and this recipe was SO good. Hope this helps.

Oh this is my favorite Tilapia recipe! And it is so easy!!
INGREDIENTS
1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets
DIRECTIONS
Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

Chili-Rubbed Tilapia with Asparagus & LemonMakes 4 servings
TOTAL TIME: 20 minutes
2 pounds asparagus, tough ends trimmed, cut into 1-inch pieces
2 tablespoons chili powder
1/2 teaspoon garlic powder
1/2 teaspoon salt, divided
1 pound tilapia, Pacific sole or other firm white fish fillets
2 tablespoons extra-virgin olive oil
3 tablespoons lemon juice
1. Bring 1 inch of water to a boil in a large saucepan. Put asparagus in a steamer basket, place in the pan, cover and steam until tender-crisp, about 4 minutes. Transfer to a large plate, spreading out to cool.
2. Combine chili powder, garlic powder and 1/4 teaspoon salt on a plate. Dredge fillets in the spice mixture to coat. Heat oil in a large nonstick skillet over medium-high heat. Add the fish and cook until just opaque in the center, gently turning halfway, 5 to 7 minutes total. Divide among 4 plates. Immediately add lemon juice, the remaining 1/4 teaspoon salt and asparagus to the pan and cook, stirring constantly, until the asparagus is coated and heated through, about 2 minutes. Serve the asparagus with the fish.
NUTRITION INFORMATION: Per serving: 210 calories; 10 g fat (1 g sat, 6 g mono); 48 mg cholesterol; 8 g carbohydrate; 24 g protein; 4 g fiber; 418 mg sodium; 645 mg potassium.

salmon baked with whipped chive cream cheese on the top. spread a decent layer on the top of salmon, pop it in the oven till fish is fully cooked (10-15 mins) gives a very savory taste to it and a unique flair! its very good! serve with rice/green veggies...

My favorite Salmon recipe - for the BBQ
Cedar Plank Soak all day or overnight in water
Tin foil - buttered
place lemon slices and onion rings along the butter (under where the salmon will go) and lightly sprinkle brown sugar along the onion and lemons add fresh dill
place salmon on top.
smear salmon with butter, sprinkle with brown sugar, dill, onion, lemon slices
Place all on cedar plank on hot BBQ and cook till salmon flakes nicely!

Quick and Easy Tilapia recipe: Good for eating fish alone OR break into pieces to use for fish TACOS..mmmmm
Need: 13x9 baking pan, foil, butter, tilapia fillets, Old Bay's seasoning (find at grocery store in seafood section), Season Salt, Pepper, 1 Lemon
Line the baking pan with foil then coat the bottom with butter. Rinse the tilapia well, then place directly on the buttered baking pan. Squeeze lemon juice over fish, then add season salt, pepper, and Old Bay's seasoning (should be a nice orange-ish color all over fish). Cover baking pan with another piece of foil and poke about 8 slits in the foil to vent slightly. Bake at about 350 degrees for about 15-20 minutes. Remove from oven, turn fish over, and season that side (all the same ingredients). Put back in oven (remember to put the foil over the fish), for another 15-20 minutes. Remove foil cover and continue cooking until almost all the juice is gone (approx. 10-20 more minutes)....works for me :-)
