Good banana cake recipes for a first birthday?

Hi ladies,

I want to make a cake that's not TOO sugary for my daughter's first birthday, and I read about the idea of a banana cake with cream cheese or banana frosting... any good tried and true recipes? I'm not a terribly experienced cook, so something more on the simple side would be good... thanks!

Banana Cake
1/2 c. butter
1 1/2 c. sugar
1 c. mashed banana (very ripe)
1/2 c. sour cream
1 tsp. baking soda
2 c. cake flour
2 egg whites, beaten stiff
2 egg yolks

Beat egg whites until stiff and set aside. Cream butter, sugar, egg yolks and mashed banana. Dissolve baking soda in sour cream. Add sour cream mixture alternating with the sifted flour to the butter creamed mixture. Fold in beaten egg whites.
Bake in round pan that has been greased and floured at 350 degrees for 35-40 minutes or until cake separates from the edge of the pan.

Cream Cheese Frosting
(this is my favorite frosting, and I use it on my Carrot Cake and Applesauce Cake too)
1 stick real butter
8 oz cream cheese
1 lb. powdered sugar (C & H cane sugar)
Blend well together. Depending on humidity, you may need to add a drop or two of cream/milk. Make sure cake is completely cool before frosting.

I use that recipe minus the nuts (because neither my daughter or I like them) and I don't make the streusel topping. It says to use a loaf pan, but I use a cake pan. It turns out just as well.



I use the cream chease frosting here:

8 oz. pkg cream cheese (softened)

1 tsp. vanilla

2 cups powdered sugar

2 tbs. milk



In a medium bowl, beat the cream cheese with blender on medium until fluffy. Add in vanilla and milk, beat. Slowly add the PS, beating between additions.



The cake nor the icing are too sweet, but they're quite delicious.
